Horseradish Cream Sauce + St Patrick’s Day Recap

St Paddy’s weekend was a fun one indeed but in true Hood Family fashion it did not go as planned.
The weather finally warmed up to a humid 90 degrees here in Texas and so of course, our A/C in our rental home decided to go kaput . Since we could not get it fixed until Monday we went out and bought fans for all the rooms and decided to stay out of the house as much as possible during the days. So not as much cooking and crafting as I wanted but we enjoyed time at the movies, park, and local restaurants. 
 
That night we came home and while the girls and Ashton built a leprechaun trap I made dinner: Crock-Pot Corned Beef {so the oven would not heat up our home more} with a Horseradish Cream Sauce.
You will love this easy to make, creamy horseradish sauce recipe. We served with with our corned beef and cabbage but it is delicious with prime rib and roasts too! 
Lunch at Freddy’s for old fashioned hamburgers and fries!
For dessert we shared a famous frozen custard to cool us down! 
Dinner in the crock-pot to not heat up the house and make it easy peasy for dinner!
Tender corned beef, honey carrots, potatoes, and Southern fried cabbage served with a side of Horseradish Cream Sauce.. 
Ava and Ashton built a leprechaun trap with coins to catch those sneaky leprechauns at night!

Horseradish Cream Sauce

Ingredients

  • 1 cup sour cream
  • 2 tbsp ground horseradish
  • 1 tsp lemon juice
  • 1/2 tsp worcestershire
  • salt and pepper to taste

Instructions

  • Mix all ingredients together in a small bowl.
  • Refrigerate until ready to serve.
  • Serve on the side with Corned Beef and Cabbage.

I love fresh horseradish. Be careful – it will clear your sinuses! 
Add all ingredients to a bowl and mix well.
Season and refrigerate until ready to serve. 
Corned beef in the Crock-Pot is the easiest and most delicious way to make beef for the holiday!
 
Cabbage cooked down with bacon is a favorite to make on St Pat’s!
Serve on the side with Corned Beef and Cabbage.

    This is a perfect meal for me….I love that the horseradish cream is homemade which I am sure is tastier and much healthier than the store-bought one. I can’t wait to make it.
