St Patrick’s Irish Potato Nachos

Happy St. Patrick’s Day!

I can’t think of a better St Patrick’s Day appetizer than Irish Potato Nachos.

This pub style comfort food is a delicious twist on traditional nachos and makes a tasty addition to your St Patrick’s Day meal!

Irish Potato Nachos

Ingredients

  • 24 oz bag small yellow potatoes
  • 1/2 lb deli sliced corned beef chopped
  • 1 cup Swiss cheese shredded
  • 2 green onions diced
  • 1 tbsp vegetable oil
  • 1 tbsp seasoning mix I used Paula Deen's House (pepper, salt, garlic, onion )
  • 1000 Island dressing for drizzling (optional)
  • Sour cream for topping (optional)

Instructions

  • Preheat oven to 425 degrees.
  • Wash and thinly slice potatoes.
  • Add potatoes to a bowl and drizzle on oil and seasoning. Toss to coat.
  • Line a baking sheet or two with aluminum and pour the potatoes on, spreading out evenly.
  • Roast for 10 minutes. Stir then roast for another 5 minutes.
  • Remove from oven and turn on broiler.
  • Either use another lined baking sheet or remove half the potatoes to a plate.
  • Start with 1/2 the roasted potatoes in the baking pan.
  • Add 1/2 the chopped corned beef and shredded cheese all over the potatoes.
  • Add the remaining potatoes on top then add remaining meat and cheese and sprinkle on green onions.
  • Broil for 1-2 minutes, until toppings are melted and warmed.
  • Remove from oven and serve immediately.
  • Scoop onto a large platter or individual plates and serve warm with 1000 Island dressing drizzled on top or sour cream on the side for dipping.

I used 1 tbsp Paula Deen’s House Seasoning (pepper, salt, garlic, onion ) and vegetable oil. 

 

Mix well.

Line a baking sheet or two with aluminum and pour the potatoes on, spreading out evenly.
Roast at 425 degrees for 10 minutes. Stir then roast for another 5 minutes.

While the potatoes cook prepare your toppings. I chop up 1/2 lb sliced corned beef and shred 1 cup of Swiss cheese.

Also dice two green onions. My husband likes 1000 Island drizzled on top right before serving. 

Either use another lined baking sheet or remove half the potatoes to a plate.

Add 1/2 the chopped corned beef and shredded cheese all over the potatoes. 

Add the remaining potatoes on top.

Then add remaining meat and cheese and sprinkle on green onions.

Optional: Drizzle 1000 Island dressing on top or serve sour cream on the side for dipping.
