Beer Battered Onion Ring Mini Potato Skins with Awesome Sauce

These bite size, twice baked potato skins are filled with Heluva Good! Beer Battered Onion Ring Dip, bacon, and cheese and are served with a side of flavorful Awesome Sauce for dipping.
I have always been a “dipper” and {luckily} I have passed it on to my daughter Ava. She loves having sauces and dips for just about everything. So naturally I am a huge fan of the tastiest dips out there: Heluva Good! Dips. After trying their new flavors, like Beer Battered Onion Ring, at BlogHerFood15 in Chicago last year, I knew I had to create a fun recipe featuring these tasty dips.

It didn’t take me long to come up with this appetizer to serve at our game day parties. Who doesn’t like twice baked potato skins?!

Ingredients:

Makes 20 mini potato skins
  • 1/2 cup Heluva Good!® Beer Battered Onion Ring Dip
  • 10 small yukon gold potatoes
  • 4 slices bacon, cooked crisp and chopped
  • 1/2 cup Cheddar cheese, shredded
  • 2 tbsp chives, diced for garnish
Awesome Sauce:
  • 1/4 cup mayo
  • 2 tbsp sour cream
  • 1 tbsp ketchup
  • 2 tsp horseradish
  • 1/4 tsp paprika
  • 1/4 tsp Seasoned Salt

Directions:

  1. Preheat oven to 400 degrees.
  2. Scrub potatoes, place on a baking sheet, and roast for 30 minutes. 
  3. Remove from oven and let cool slightly for 10 minutes.
  4. Turn oven to broil.
  5. Slice each potato in half then scoop out about 50% of the filling, careful not to scoop through the sides of the skin.
  6. In a bowl, mix together the potato filling, dip, and bacon.
  7. Spoon mixture into each potato skin, mounding it on top, then place in rows on a baking sheet.
  8. Broil for 3 minutes or until hot and bubbly.
  9. Remove from oven, sprinkle cheddar cheese on top, and broil for an additional 1-2 minutes until cheese is melted.
  10. Remove from oven, place on a plate, and sprinkle with chives.
  11. Serve warm with a side of Awesome Sauce {recipe below} for dipping.
Awesome Sauce:
  1. Mix together all ingredients in a bowl.
  2. Cover and refrigerate for 30 minutes. 
  3. Serve a bowl of sauce along with potato skins. 
Preheat oven to 400 degrees.

Mash the potato filling up in a bowl.
Add crispy diced bacon.
Add 1/2 cup of Heluva Good! Beer Battered Onion Ring Dip.
Stir it all together and try not to grab and fork and eat it all right then.
Spoon mixture into each potato skin, mounding it on top, 
then place in rows on a baking sheet. Broil for 3 minutes.
Remove from oven, sprinkle cheddar cheese on top,
 and broil for an additional 1-2 minutes until cheese is melted.
For the Awesome Sauce mix together 1/4 cup mayo, 2 tbsp sour cream, 1 tbsp ketchup, 2 tsp horseradish, 1/4 tsp paprika, 1/4 tsp Seasoned Salt in a bowl. 
Place in the fridge until ready to serve.
Place on a plate and garnish with diced chives if you’d like. 
Serve warm with a side of Awesome Sauce for dipping.

I served these at our Superbowl Party and they were gone within minutes -and so were my extra containers of Heluva Good! Dip! Gotta stock up next time to feed my hungry tailgating {or should I say homegating?} friends!
