Caramel Apple Cookies

Christmas cookie baking makes my heart so happy especially when I bake with loved ones and share the treats with others! Cookie exchanges are such a  fun way to try other cookie recipes and share your own with fellow foodies and dessert lovers! These Caramel Apple Cookies were a fun creation I came up with in my kitchen when I was playing with all the fall flavors I love- caramel candies, tart apples, apple cider, and of course, cookies! These delicious holiday themed cookies are soft and chewy and filled with gooey caramel and tart apples on the inside!

They were all delicious and perfect for holiday snacking, especially for my two sweet tooth kiddos!

Caramel Apple Cookies

Makes 3 dozen

Equipment

  • Makes 3 dozen

Ingredients

  • 1/2 cup butter {1 stick} softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dried apple slices chopped
  • 1/4 cup apple cider or juice
  • 4.5 oz box soft caramels

For the coating:

  • 1/4 cup sugar
  • 1 tbsp apple pie spice

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl cream together butter and both sugars.
  • Add eggs, then vanilla and apple juice and mix on medium speed until well combined.
  • In a separate large mixing bowl stir together flour, salt, baking powder, and baking soda.
  • With the mixer on slow speed, slowly add the dry flour mix to the wet mix until fully combined.
  • Turn off mixer and stir in chopped apples.
  • Add dough to the fridge for 10 minutes to make it not as sticky and easier to handle.
  • Unwrap the caramel candies and cut each candy in half.
  • In a small bowl mix together sugar and apple pie spice for the topping. Set aside.
  • Using a small ice cream scoop, scoop a small ball of dough then roll in your hands.
  • Make an indentation in the center and place a caramel piece in the center of the dough.
  • Mold the dough around the caramel and re-roll if needed.
  • Roll the cookie ball in the sugar topping then place on a lined baking sheet.
  • Repeat with remaining dough.
  • Bake for 11-14 minutes.
  • Let cool slightly on the baking sheet then remove to a rack to cool.

I love apple cider all season long so I thought what the hey let’s add some to my cookies!
In a separate large mixing bowl stir together flour, salt, baking powder, and baking soda. 
With the mixer on slow speed, slowly add the dry flour mix to the wet mix until fully combined.
I love using dried apples in my baking.
I found these soft apple rings in the produce dept at my grocery store.
Chop up the apples into small bite size pieces.
Turn off mixer and stir in chopped apples. 
Add dough to the fridge for 10 minutes to make it not as sticky and easier to handle.
I love these soft chewy caramel candies and 
knew they would be delicious baked in the center of my cookies!
Unwrap the caramel candies and cut each candy in half.
In a small bowl mix together sugar and apple pie spice for the topping. Set aside. 
Using a small ice cream scoop, scoop a small ball of dough then roll in your hands. 
Make an indentation in the center and place a caramel piece in the center of the dough. 
Mold the dough around the caramel and re-roll if needed.
Roll the cookie ball in the sugar topping.
Place on a lined baking sheet and repeat with remaining dough.
Bake for 11-14 minutes.
 
Let cool slightly on the baking sheet then remove to a rack to cool. 
All packaged up and ready to mail out! 
Ooey gooey and absolutely yummy!
