3 Ingredient Cherry Shortcakes

And just like that February is almost over!

I am still playing catch up with Valentine’s recipes 
and Mardi Gras is hot on my heels this weekend!
But before we get to celebrating Fat Tuesday, I want to share this easy peasy recipe I made for my little loves on Valentine’s Day along with a few pictures from our always fun Valentine’s week. I made these Cherry Shortcakes using leftover homemade cherry pie filling from my As You Wish Glazed Cherry Hand Pies last week. This simple recipe is always a winner with my kiddos no matter what fruit I use. Add a few scoops of warm pie filling to a soft sponge cake shell and top with whipped cream and voila! Dessert is served. Of course, since it was Valentine’s Day Ashton made his signature dessert: chocolate dipped strawberries, so we enjoyed those scrumptious treats too.

If that’s not enough excitement for one day, I have one more sweet thing to share with y’all: the Galentine’s Sweet Progress Box Swap and the goodies I received from my partner! 
This was my first time participating and y’all know I love making gift boxes, so this was right up my alley! It is a seasonal gift exchange for bloggers and we are randomly assigned fellow bloggers as partners. For this swap we filled out a short survey on what we like {for me namely tea and chocolate, of course} and then we surprised our partner with a Valentine’s themed box for Valentine’s Galentine’s Day! 
 

I was assigned Sonya who blogs over at Sonyakendall.com . She is a homeschooling Mama who likes cooking, reading, and sewing. Of course, I sent her some baked goods along with local Louisiana items and some other goodies I knew she’d like. Check out what I sent Sonya here.

3 Ingredient Cherry Shortcakes

Makes 6 shortcakes

Ingredients

  • 1 1/2 cups warm Cherry Pie Filling
  • 6 pack yellow sponge cake dessert shells
  • whipped cream for topping

Instructions

  • Add a couple heaping spoonfuls of warm pie filling to each dessert shell.
  • Top with a dollop of whipped cream.
  • Be extra fancy and drizzle cherry juice from the pie filling on the plate and serve with a spoon and a smile!

Do not be intimidated by homemade pie filling. It is simple to make {with fresh or frozen fruit}
and your kitchen will smell amazing! See my recipe here.
I used about 1 1/2 cups of cherry pie filling for this recipe. 
Ok, I didn’t make everything from scratch -ain’t nobody got time for that! I used these store bought sponge cake dessert shells for the shortcakes.
Add a couple heaping spoonfuls of warm pie filling to each dessert shell.
Top with a dollop of whipped cream.
Make it extra special with a chocolate dipped strawberry on the side.
My girls loved this dessert and I loved that it took 2 minutes to make!

 He made our girls heart shaped cinnamon rolls for Valentine’s breakfast! 
Treats with my sweet!
 Homemade Valentine’s are the best! Ava gave her classmates ring pops with her “you’re a gem of a friend” cards and Stella gave her friends scooby snack cookies with her “I ruff you” cards. I also packaged up my Chocolate Butterscotch Haystacks and handed them out to the moms in our Mommy and Me music class. 
 One of my favorite Valentine’s traditions is the “What I Love About You” door. Ashton and I write on hearts what we love about each girl and tape it to the door for them to read. 
 Dinner for my girls: was pasta and sausage but the appetizer and dessert were what they enjoyed the most! How cute is the cheese platter?!
One of our crafts this year- all of our fingerprints on a heart poem.

 basket each of cards, crafts, and books for the girls! 
We were lucky enough to have a dress up lunch for

Valentine’s Day at the local tea parlor. I love my family!

I love to write. Mainly I love to make notes and lists, so this journal and pen set are perfecto for me.
Ava stole the pens immediately but that is Mom life, I guess. 
As if the box full of gifts wasn’t enough Sonya sent me an Amazon gift card too.
I don’t know about y’all but I am seriously kinda addicted to Amazon Prime so a gift card is definitely put to good use!

📚 We had a fun, sunny, book filled summer! My girls completed a whopping 9 summer reading programs across our local area! I am so proud that they have a  true love of reading at their young ages.
