Chick-fil-A Polynesian Chicken Casserole

Winner, winner chicken dinner! I won a small nugget tray from my local Chick-fil-A. I thought I would think out of the box- er tray- and turn them into a family friendly Hawaiian casserole!
Anyone who knows me, knows Chick-fil-A is my #1. I not only love the food but I love the company too. Their family values and excellent customer service along with their darn good chicken have made me a very loyal customer over the years.
Two years ago I was asked to join the Chick-fil-A Moms Panel. This corporate run group did surveys on new items, gave feedback on experiences, and just simply shared our Chick-fil-A love on social media. Well my friends, all good thing’s must come to an end and the Chick-fil-A Moms group is no more. Scroll down to see some of my favorite Chick-fil-A memories from this past year in San Antonio and check out my recipe remake featuring Chick-fil-A chicken nuggets and Polynesian sauce.

Chick-fil-A Polynesian Chicken Casserole

Makes 6 servings

Ingredients

  • 1 small Chick-fil-A nugget tray {64 pieces/35 ounces}
  • 2 cups rice uncooked {I like Jasmine}
  • 1/2 yellow onion {approx 1 cup} diced
  • 1 red bell pepper seeded and chopped
  • 2 carrots peeled and chopped
  • 15 oz can pineapple tidbits drained and reserve juice
  • 1/2 cup pineapple juice {from the canned pineapple}
  • 3 cups chicken broth
  • 1/4 cup Chick-fil-A Polynesian sauce {plus more for drizzling}

Instructions

  • Preheat oven to 375 degrees.
  • Add rice, chicken veggies, and pineapple {reserve juice} to an 9X13 baking dish.
  • In a small bowl mix together pineapple juice and 1/4 cup Polynesian sauce.
  • Pour into a large bowl with the chicken broth and whisk until combined.
  • Pour into the baking dish.
  • Cover with foil and bake for 45-65 minutes,
  • depending on how long it takes for all the liquid to absorb.
  • Fluff the casserole with a fork then drizzle with more Polynesian sauce.
  • Serve warm and enjoy!

I was so stoked to win this catered tray. These nuggets really are a time saver and my whole family loves them. We have had Chick-fil-A catering numerous time at birthday parties and military fundraisers. We even had friends that catered their wedding with Chick-fil-A nuggets!
All the info for baking and serving is right on the oven proof tray. 
Can I just say I love to dip! Chick-fil-A sauces are so darn good I have to keep myself from using a spoon and eating them up! One of my favorites is the sweet Polynesian Sauce, similar to a sweet and sour sauce. I received a tub {!!!} of it with my catering order so I decided to add it to my casserole too!
Start with a 9X13 baking dish. Add 2 cups of uncooked rice.
Top with the chicken {minus the few you inevitably snacked on}.
Now add chopped veggies. I like sweet onions.
Then red bell pepper.
Fresh chopped carrots.
And a 15oz can of pineapple tidbits {drained}.
Oh yeah lookin’ good already!
Now for the sauce. You just need pineapple juice and 1/4 cup Polynesian sauce. 
Mix together in a bowl. 
Now stir into 3 cups of chicken broth.
Pour into the baking dish. 
Cover with foil and bake at 375 degrees for 45-65 minutes, 
depending on how long it takes for all the liquid to absorb.
Remove foil and fluff it up with a fork.
Now drizzle with more Polynesian sauce on top.
Serve warm and enjoy!

I simple cannot get enough Chick-fil-A drinks! My favorites {in order} are: Vanilla Iced Coffee, Sweet Tea, and Frosted Lemonade.

    This sounds so yummy! I love that it is fast and easy to make, too. We don't have Chick-Fil-A here in Canada where I live but I have tried it before . . . I have to say, it's pretty darn delicious!

    What a great recipe! We have copycat Polynesian sauce recipe that we make. I will have to give your recipe a try for this yummy Chick-fil-A Polynesian Casserole. It looks like something my family would love and easy too!

    This recipe looks yummylicious. We don't have Chick-fil-A here, in Germany but will remember to try them when we visit the U.S.I love this recipe as I don't like spending too much time to cook, so, this is perfect for me and my husband. A quick yummy fix for our hungry bellies. One question though…Can I use market bought chicken nuggets/wings instead of the Chick-fil-A tray??

      Hi Sonali! Yes, you can use pre-breaded and cooked chicken, cut up, in this recipe too!

    I cannot eat anything breaded (gluten), but I assume this will work with plain, cooked chicken chunks? Won’t have the same, yummy flavor as breaded, I’m sure, but maybe I could add something to mimic that taste — maybe crushed potato chips on top right before serving? Any other ideas?

      Hi Jean,
      Non breaded grilled chicken would work great. I like your chip idea! I add panko crumbs tossed with butter or olive oil on top of casseroles too for texture. I am not sure if there is a gluten free version of those?
