Funfetti Cake Mix Cookies for Teacher Appreciation

Bake these soft colorful Funfetti cookies at home with your kids! They make delicious treats for teachers on the last day of school. Wrap them up in a colorful container with a “Smart Cookie” sign and handout at school!  
Oh my heart!My oldest daughter Ava graduated preschool today! All day long I have been holding back tears y’all. how is it my baby girl is a kindergartner already? 
 
Ava attends part day school on the Army post here and is lucky enough to have not one, not two, but three amazing teachers! She will sure miss them! 
We brought them each a basket of these Funfetti Cookies as a thank you present. Ava was so happy to give them a gift that she helped bake. I love when she helps me in the kitchen!

Funfetti Cake Mix Cookies

Makes 20-24 cookies

Ingredients

  • 1 box 15oz. Funfetti Cake Mix
  • 2 eggs room temp
  • 1/3 cup vegetable oil
  • 1 tsp vanilla or butter vanilla emulsion
  • 1/3 cup {or more!} rainbow colored sprinkles

Instructions

  • In a large mixing bowl add cake mix, eggs, vanilla, and oil.
  • Beat on medium speed until smooth.
  • Pour in sprinkles and fold in with a spatula.
  • Cover the dough and place in the fridge for at least 30 minutes {up to overnight}.
  • Preheat oven to 350 degrees.
  • Remove from fridge and using a medium sized ice cream scoop form dough into medium size balls and place in rows on a lined baking sheet.
  • Bake for 10-12 minutes. They will still be soft and light colored.
  • Remove from oven and let  cool on the cookie sheet before removing to a plate to serve or wrap up.

I am a fan of using cake mix for cookie recipes and these easy Funfetti Cookies are a breeze with just 5 ingredients including a box of Funfetti Cake Mix! 
I also use Butter Vanilla Emulsion from LorAnn Oils.. I found these at Walmart and also add this flavor to my pancakes and waffles. 
You can never have too many sprinkles, right? The Funfetti cake mix had colored bits in it but I wanted more! I added 1/3 cup of rainbow sprinkles after mixing together the batter. . 
In a large mixing bowl add cake mix, eggs, vanilla, and oil. 
Beat on medium speed until smooth. 
Pour in sprinkles and fold in with a spatula.
Cover the dough and place in the fridge for at least 30 minutes {up to overnight}.

This is the perfect time to ask your kiddos to help!

I filled with tissue paper and cookies for Ava to give her school teachers for Teacher Appreciation Day.
