Hot Pink Barbie Layered Mug Cake

This hot pink cake in a mug is an easy to make layered dessert inspired by the Barbie movie.

Make it for a girls movie night or a Barbie themed party!

Hot Pink Barbie Layered Mug Cake

Makes 1 large layered mug cake

Ingredients

  • 8 tbsp flour divided
  • 1/2 tsp baking powder
  • 2 tsp sugar
  • 4 tbsp milk
  • 1 tbsp vegetable oil
  • 2 tbsp Jell-O dry mix I used Starburst pink flavor- not sugar free
  • pink food coloring icing coloring works well too
  • Whipped cream for topping
  • pink sprinkles mix for topping

Instructions

  • Combine half of the first six ingredients in a large, tall mug.
  • Mix well with a fork.
  • Cook in the microwave for 1 minute. Let cool. Repeat with another mug and remaining ingredients.
  • Top one of the cooled cakes in the first mug with whipped cream then remove the second
  • small cake from other mug and add on top of the whipped cream in the first mug.
  • Top with a swirl of whipped cream again and then add sprinkles and any other decorations (I used pink barbie shoes).
  • Serve immediately and enjoy!

This easy mug cake can be mixed up in a minute with six ingredients. 

I made this version pink inspired by the new Barbie movie.

I used Starburst pink Jello mix, but after I made it the first time I decided to make it brighter by adding pink food coloring.

Combine half of the first six ingredients in a large, tall mug. 

Mix well with a fork.

Cook in the microwave for 1 minute. Let cool. 

Repeat with another mug and remaining ingredients.

Top one of the cooled cakes in the first mug with whipped cream

Then remove the second small cake from other mug and add on top of the whipped cream in the first mug.

Top with a swirl of whipped cream again and then add sprinkles.

You can also add any other decorations on top (I used pink barbie shoes).

Serve immediately and enjoy.

Perfect for a girls movie night. Barbie would approve!
