Jelly Filled Giant Donut Cake

Ava graduated kindergarten last week and after I cried for most of the day {happy tears}, I decided to make her this Jelly Filled Giant Donut Cake to celebrate. It was a hit with my foodie family and a fun treat to make! I used a special donut pan from Hobby Lobby but you could also try two round pans and trim it to fit together. The sky’s the limit on flavors, filling, and toppings but I went with vanilla cake and strawberry jam and pink topping with sprinkles.

Jelly Filled Giant Donut Cake

Ingredients

  • 1 16 oz boxed cake mix {I used vanilla}
  • 1 cup water
  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup strawberry jam
  • 4 oz bag pink candy melts {I used strawberry flavor}
  • 1/4 cup rainbow sprinkles for topping

I used these silicone donut pans from Hobby Lobby. 
Grease both molds and place on a cookie sheet.
Prepare batter according to cake mix box.
In a bowl mix together cake mix, water, eggs, and oil.
Beat with mixers on medium speed until well blended.
Pour evenly into both pans up to fill line.
Bakes for 30 minutes, rotating at 15 minutes.
Cool completely then to remove from mold, hold a plate against the top of the cake and flip. 
Assemble the cake halves together like a donut. You may have to trim to fit flat together. 
If you want it filled, spread strawberry jam all over the center of the cake before
 topping with the other half. 
Melt pink candy melts in the microwave on 50% power for one minute. 
Stir then heat again for 30 seconds or until smooth.
Spread generously all over the top and sides of the cake.
Immediately add rainbow sprinkles all over the pink topping. 
How fun and delicious is this cake?!
Cut into slices and serve.
