Today I am participating in a fun event with the #FoodBloggerLove group. We are doing a Valentine’s Day post swap with another blogger. I was assigned to show some blogger love to Renee at If Spoons Could Talk. Renee makes delicious and healthy food creations on her blog but also has a sweet tooth like me! So I created these adorable Strawberry Cheesecake Jars with my little helper Ava. They are the perfect personal size desserts so you can satisfy your sweet tooth without going overboard! These semi homemade mini desserts are made with store bought cheesecake filling and homemade strawberry sauce and whipped cream. We even made simple chocolate hearts to go on top! Check out the recipe below and be sure to visit the other bloggers #FoodBloggerLove posts in the link up!

Renee has a degree in Culinary and Food Science and likes to share recipes, tips, and reviews on her food blog, If Spoons Could Talk. She and her hubby follow the Trim Healthy Mama Plan so many of her recipes are low fat or low carb and sugar-free. Renee and I are both total foodies and I am excited to try so many of her mouthwatering recipes!

Mini Strawberry Cheesecake Mason Jars with Chocolate Hearts

Makes 4 mini mason jars

Ingredients

  • 1 cup ready to eat cheesecake filling {I use Philadelphia Cream Cheese}
  • 1/4 cup strawberry sauce {recipe below}
  • 1/4 cup whipped cream {recipe below}
  • 1/2 cup semi sweet chocolate chips

For the strawberry sauce:

  • 16 oz 1lb strawberries, stems removed and sliced
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tbsp lemon juice

For the whipped cream:

  • 1 cup heavy cream
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla

Instructions

  • Lay out a sheet of parchment paper on a baking sheet.
  • Add chocolate chips to a microwave safe bowl and microwave for 90 seconds.
  • Stir then microwave for 15 second intervals, stirring in between, until smooth.
  • Scoop into a piping bag {or a ziptop bag with the tip cut off}.
  • Pipe thick chocolate hearts all over the paper. You can also spell words like "love".
  • Let cool completely before gently removing.
  • Next, in a small bowl mix together 1/4 cup cooled strawberry sauce and 1 cup cheese cake filling until smooth. Depending on the size of your jars you made need a little more, a little less.
  • Pour filling into 4 small jars.
  • Top with whipped cream and a chocolate heart.
  • You can also add personalized M&Ms like we did here!

For the strawberry sauce:

  • Combine all the ingredients in a small pot over medium heat.
  • Bring to a boil and cook over medium low heat for 20-30 minutes.
  • Chill until ready to serve.
  • {Also delicious served warm on French toast, pancakes, and ice cream!}

For the whipped cream:

  • Chill a mixing bowl and mixer attachment in the freezer until ready to use.
  • Remove bowl and mixer from freezer and add heavy cream, vanilla, and brown sugar to the chilled bowl.
  • Mix on high until soft peaks form.
  • Add to a piping bag or gently spoon on top of the cheesecake jars.
  • Store remaining in a sealed container in the refrigerator until ready to use.

Start with juicy sliced strawberries.
Combine strawberries, sugar, water, and lemon juice in a small pot over medium heat.
Bring to a boil and cook over medium low heat for 20-30 minutes.
Chill until ready to serve.
Add chocolate chips to a microwave safe bowl and microwave for 90 seconds.
Stir then microwave for 15 second intervals, stirring in between, until smooth.
Scoop into a piping bag {or a ziptop bag with the tip cut off}.
Pipe thick chocolate hearts all over the paper.
Let cool completely before removing.
Next, in a small bowl mix together 1/4 cup cooled strawberry sauce and cheese cake filling until smooth.
 Depending on the size of your jars and the consistency you like,
you made need a little more, a little less.
Pour into jars. How cute are these?
Fill all the way to the top.
If you make homemade whipped cream add to a piping bag or dispenser.
Add a generous swirl on top then top with chocolate heart or even a chocolate word.
You can also add personalized M&Ms like we did here!
Ava was excited for her treat!
My little love and I had a fun dessert party!
 She makes my heart happy!
Hope you enjoyed this recipe.
Have a wonderful Valentine’s Day foodie friends!

Final Florida lunch with my Dad at a local hotspot: @stewbyseafoodshanty on Okaloosa Island. They have multiple locations but this one is by far my favorite. New, clean, beautiful scenery, and lots of space inside and outside.
🐟🐠🎣
I could eat here every day. Their seafood is the BEST. For lunch we tried their grilled grouper sandwich and seafood combo plate with amberjack, grilled shrimp, fried oysters, and all the sides and sauces to go with it (check out those scrumptious cheese grits)!
🐟🐠🎣
Next door they have a seafood market, gift shop, and new steamer restaurant with steam buckets of shrimp, crab, and flounder with all the fixins. ⬅️ I know what I am ordering next time! Their motto: local fish at local prices. Check them out and thank me later.

🦀 Check out our lunch yesterday at my parents favorite local spot, @soiasianbistro . We tried a variety of items off of their massive updated menu.
🍣 The sushi was by far the best thing we ordered. Another must try is the Shiso Mono appetizer, which is tempura fried Japanese basil leaves stuffed with spiced tuna.
🍤 We also ordered cucumber salad, pork ramen, udon noodles, and chicken katsu curry. All were tasty and big enough to share with the sushi appetizer.
🍜 I recommend checking out Soi Bistro if you are in town and enjoy fresh seafood and Asian dishes like we do. But save it for a date night or special occasion b/c their price point was pretty high for a casual meal. ❤
