Swirled Pink Lemonade Cake Cookies

Pink Lemonade is our go to summertime drink so I thought I would make these fun crinkle cake cookies inspired by our summertime fave. Ava helped me swirl the colors and the end result was the softest and tastiest lemon flavored cookie EVER!

My little loves spent a fun afternoon last week enjoying some lemonade and cookies in downtown Leesville. My new friend {and mucho talented photographer}, Deanna from Down the Rhode Photography captured some sweet shots!
 These two keep me one my toes- and smiling- every day!

They were no longer interested in smiling for pics once they spotted the food.
They are so my children!

Swirled Pink Lemonade Cake Cookies

Makes 18 cookies

Ingredients

  • 1 pkg. Duncan Hines Lemon Supreme cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • juice from 1 lemon
  • 1 tsp. lemon zest
  • 1 cup powdered sugar
  • pink icing coloring {brighter than food coloring} as needed

Instructions

  • Preheat oven to 375 degrees.
  • In a large bowl add cake mix, eggs, oil, lemon juice, and zest.
  • Mix until combined.
  • Add a few drops of pink icing coloring and swirl to combined slightly. You can use traditional food coloring I just like how bright the icing coloring is.
  • Roll dough into tablespoon size balls and drop into a bowl of powdered sugar.
  • Roll them around until they're lightly covered.
  • Place them in rows on a lined cookie sheet.
  • Bake for 6-7 minutes.
  • The bottoms will be light brown, and the insides chewy.

Cake mix cookies are a favorite of mine! They are extra soft and delicious!
Even better they are super simple to make!
To make these lemonade flavored cookies I added fresh lemon zest and juice to the lemon cake mix.
Mama’s little helper is always there to mix, scoop, and taste test!
In a large bowl add cake mix, eggs, oil, lemon juice, and zest.
Mix until combined.
Add a few drops of pink icing coloring and swirl to combined slightly. 
You can use traditional food coloring I just like how bright the icing coloring is.
Roll dough into tablespoon size balls.
Drop into a bowl of powdered sugar. 
Roll them around until they’re lightly covered. 
Messy fun!
Place them in rows on a lined cookie sheet.
Bake for 6-7 minutes at 375 degrees.
The bottoms will be light brown, and the insides chewy.
