Happy Movie Monday friends!

This month’s theme is Back to School and I am excited to share a recipe inspired by one of my favorite comedies: Napoleon Dynamite. If you love the movie like I do you know there Napoleon has a love for tater tots and carries them in his pants pocket.

So my clever husband came up with the idea to make Tot Pockets, like Hot Pockets but with tater tots added to the meat and cheese filling!

On the last Monday of each month, a group of bloggers participate in a #MovieMondayChallenge, hosted by C’mon Get Crafty! We decide on a topic, genre, or specific movie to use for inspiration and everyone gets free reign to create something wonderful! Tot Pockets Inspired by Napoleon Dynamite

Makes 8 pockets

Ingredients

  • 1 pkg {2 sheets} puff pastry squares thawed
  • 1 cup ham diced
  • 1 cup cheddar cheese shredded
  • 1 {heaping} cup of tater tots cooked
  • 1 egg beaten

Instructions

  • Preheat oven to 400 degrees.
  • Unroll the thawed puff pastry sheets and roll out to make it thinner.
  • Cut each sheet into 4 squares.
  • Add a couple spoonfuls of diced ham and shredded cheese on the left side of each square.
  • Top with 3 tater tots each.
  • Brush the beaten egg on all edges of the square.
  • Fold over the top half of the dough to form a pocket.
  • Crimp the edges with a fork to seal and poke a few holes on top to vent.
  • Place on a large lined baking sheet.
  • Brush tops of each pocket with egg so it will bake a golden color.
  • Bake for 15 minutes or until golden and puffed up.
  • Serve warm and enjoy!

I bought a small bag of frozen tater tots and baked half the bag.
I let my kiddos eat half and used about 24 tots for the Tot Pockets.

I decided to use puff pastry for these pockets because I love the flaky, rich flavor.
You can also use pie crust or biscuit dough. 

Unroll the thawed puff pastry sheets. Roll out to make it thinner.

Cut each sheet into 4 squares.

 You can use any filling with the tater tots.
I like chicken, turkey, bacon, or ham and then lots of cheese.

 Add a couple spoonfuls of diced ham and shredded cheese on the left side of each square.

 Top with 3 tater tots each.

Brush the beaten egg on all edges of the square.

 Fold over the top half of the dough to form a pocket.
Brush tops of each pocket with egg so it will bake a golden color.

Crimp the edges with a fork to seal and poke a few holes on top to vent.

 Place on a large lined baking sheet and bake for 15 minutes at 400 degrees.

The pockets will be golden and puffed up.
Serve warm and enjoy your Tot Pocket!

    This is a movie that passed me by, but I will need to give it a watch, especially if it involves tots! I love tots and I need to make this!

    I can't believe I'm saying this, but I have never watched this movie. I remember when it came out that there was so much talk about it and yet I never watched it. This recipe has me curious and I think I need to watch this.

    Ahh I remember this movie, so funny! Do you think these would be ok if you made them and froze individually before baking? Then I can make up bulk and have them ready to go!

      I have never made them ahead then froze but I think they would hold up well.

🍜 We had so much fun celebrating Lunar New Year last weekend with dinner at @pho_85_noodle_house_llc in Bentonville, AR! The Banh Mi sandwich and Beef and Seafood Pho soups were filled with fresh ingredients and flavor packed. As you can see their portions were huge so it's a great place to share! 🌟I had to step out of my comfort zone today and attend my first networking event since moving to Arkansas. I already  struggle with meeting new people and being social since I work from home but now I live in a new city and know no one. Thank goodness I found @winnwa . The networking lunch today at @bonefishgrill was exciting, encouraging, and of course, fun! Over 80 local business women attended and everyone had a chance to introduce themselves and share what they do. I look forward to more  #womeninnetworking events in the future.
