Chocolate Butterscotch Haystack Cookies

Y'all know I have a sweet tooth and like any true foodie I like to try new things. So when I experimented with no bake cookies last Christmas and tried a Haystack for the first time, I knew I had found something special. These simple 3-4 ingredient treats are made with melted peanut butter and butterscotch poured over crunchy chow mein noodles. My original recipe was one of my most popular on the blog, so I decided for Valentine's Day I would make a twist on the original Haystacks and switch out chocolate for peanut butter. This also makes them school and church friendly since peanut butter treats are usually not allowed there because of children's allergies.

Try this recipe today. It only takes 5 minutes to make and I bet you'll love them as much as I do!

Makes 18-20 haystacks

1 cup butterscotch chips
1 cup semi sweet chocolate chips
3 1/2 cups dry chow mein noodles


  1. Add the butterscotch and chocolate chips to a double boiler and stir until melted. 
  2. Remove from heat and stir until smooth.
  3. Mix in chow mein noodles.
  4. Drop spoonfuls of noodles onto a parchment lined baking sheet.
  5. Let harden then store in a resealable container.

I used 1 cup semi sweet chocolate chips and 1 cup butterscotch chips. You could sub milk chocolate if you'd like.
Add the butterscotch and chocolate chips to a double boiler.
Stir until melted and smooth.
Pour the melted chocolate mixture on top of the chow mein noodles.
Coat to combine well.
You want every piece covered!
I use a large spoon and drop scoops on a lined baking sheet.
Depending on the size you should be able to get 18 or 20 Haystacks.
Let harden and cool.

  1. I would like to make haystacks using only Hershey cocoa and pretzels. no peanuts, no marshmallows and no chips...do you have a recipe for this?
