This post is sponsored in conjunction with PumpkinWeek . I received product samples from sponsor companies to aid in the creation of the PumpkinWeek recipes. All opinions are mine alone.
These savory, soft Pumpkin Bacon Waffles are drizzled with warm cinnamon syrup and are so good they will be devoured in minutes! Check out the recipe below along with all the other bloggers' recipes on the last day of PumpkinWeek!

Ingredients:

Makes 8 small/medium waffles
  • 1 cup canned pumpkin
  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 6 pieces of bacon, cooked crisp and chopped
  • 2 tsp pumpkin pie spice
  • 1 cup maple syrup
  • 1 tsp cinnamon

Directions:

  1. Preheat waffle iron.
  2. In a large bowl mix together pumpkin, pancake mix, milk, and pumpkin pie spice until well combined.
  3. Pour in chopped bacon and stir in.
  4. Depending on the size of your waffle iron, you use about 1/3 of batter for each waffle.
  5. Pour batter into the greased, hot waffle iron.
  6. Cook for about 3 minutes then remove to a plate. Repeat until you use all the batter.
  7. Meanwhile, in a small saucepan heat the maple syrup over medium low and stir in cinnamon.
  8. Heat for a few minutes until warmed.
  9. Serve the warm syrup on the side and let everyone drizzle some on top of their pumpkin waffles. Enjoy!
