Crock-Pot Overnight Breakfast Apple Crisp

I just can’t get enough of my Crock-Pot, y’all! Seriously fix it and forget it meals are my favorite especially during the busy holidays! I wanted to try out a few overnight breakfast recipes and decided to use up some leftover granola. I had a big bag of apples and BAM! Breakfast Apple Crisp was created! Serve it with yogurt for a healthy and quick holiday breakfast!

Crock-Pot Overnight Breakfast Apple Crisp

Ingredients

  • 8 large apples cored and sliced {peeling optional}
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 2 tbsp lemon juice
  • 2 tbsp butter cubed
  • 2 cups granola
  • Greek yogurt for serving

Instructions

  • Add sliced apples to a large Crock-Pot.
  • Cover with brown sugar, cubed butter, cinnamon, and lemon juice.
  • Finally sprinkle on granola.
  • Cook on low for 7-8 hours {overnight} and serve warm in the morning in bowls topped with yogurt for a hearty and healthy breakfast!

 I used a variety of large apples including Granny Smith, Gala, and Red Delicious.
 Core and slice the apples. You can peel them if you’d like but I left the skin on.
Add the apples to the Crock-Pot.
 Add 2 tbsp diced butter.
 Now sprinkle on brown sugar, cinnamon, and lemon juice {about 1 lemon worth}.
 We always have granola handy for topping yogurt, dessert, oatmeal, you name it!
I got this bag of Udi’s Gluten Free Granola from the BlogHerFood conference this year and love it!
 Pour on 2 cups of granola.
 Cover and cook on low for about 8 hours {overnight}.
 In the morning you will have this deliciousness!
 
I like to add creamy Greek Yogurt on top of my Breakfast Apple Crisp.
 Breakfast is served! 
This hearty meal is easy to make and perfect for busy holiday mornings.

    It looks absolutely yummy!! I was wondering if you could substitute oatmeal? Not the quick oats either. What do you think? Thanks !
