Holiday Pecan Snowball Cookies

These melt in your mouth cookies are a classic buttery, 
soft cookie you will love to make and eat every holiday season!

Pecan Snowball Cookies

Makes 24 cookies

Ingredients

  • 1 cup butter softened
  • 2 cups powdered sugar divided
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup pecans finely chopped

Instructions

  • In a large mixing bowl, add butter and 1 cup powdered sugar.
  • Beat with a mixer until fluffy.
  • Add vanilla and slowly add flour and mix until just combined.
  • Fold in chopped pecans with a rubber spatula until mixed well.
  • Cover the bowl and chill in the fridge for 30 minutes.
  • Preheat oven to 350 degrees.
  • Scoop out dough and roll into golf ball size dough balls.
  • Place in rows on a lined baking sheet.
  • Bake cookies for 14 minutes.
  • Remove from oven and let cool slightly then while cookies are still warm, roll them in remaining 1 cup powdered sugar.
  • Place cookies on a cooling rack and let cool completely.
  • Roll in powdered sugar again then serve or store in a sealed container.

Beat with a mixer until fluffy.
You want small pieces of pecan in these soft cookies so either buy pecans pieces or crush chopped pecans like I did with a rolling pin or food processor. 
Add vanilla and slowly add flour and mix until just combined.
 Fold in chopped pecans with a rubber spatula until mixed well. 
Cover the bowl and chill in the fridge for 30 minutes.
Scoop out dough and roll into golf ball size dough balls. 
Place in rows on a lined baking sheet. 
Bake at 350 degrees for 14 minutes.
