Holiday Pecan Snowball Cookies

These melt in your mouth cookies are a classic buttery,
soft cookie you will love to make and eat every holiday season!

 Ingredients:

Makes 24 cookies
  • 1 cup butter, softened
  • 2 cups powdered sugar, divided
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup pecans, finely chopped

Directions:

                  1. In a large mixing bowl, add butter and 1 cup powdered sugar.
                  2. Beat with a mixer until fluffy.
                  3. Add vanilla and slowly add flour and mix until just combined.
                  4.  Fold in chopped pecans with a rubber spatula until mixed well.
                  5. Cover the bowl and chill in the fridge for 30 minutes.
                  6. Preheat oven to 350 degrees.
                  7. Scoop out dough and roll into golf ball size dough balls.
                  8. Place in rows on a lined baking sheet.
                  9. Bake cookies for 14 minutes.
                  10. Remove from oven and let cool slightly then while cookies are still warm, roll them in remaining 1 cup powdered sugar.
                  11. Place cookies on a cooling rack and let cool completely.
                  12. Roll in powdered sugar again then serve or store in a sealed container.

In a large mixing bowl, add butter and one cup powdered sugar.
Beat with a mixer until fluffy.
You want small pieces of pecan in these soft cookies so either buy pecans pieces or crush chopped pecans like I did with a rolling pin or food processor.
Add vanilla and slowly add flour and mix until just combined.
Fold in chopped pecans with a rubber spatula until mixed well.
Cover the bowl and chill in the fridge for 30 minutes.
Scoop out dough and roll into golf ball size dough balls.
Place in rows on a lined baking sheet.
Bake at 350 degrees for 14 minutes.
Remove from oven and let cool slightly.
Then while cookies are still warm, roll them in powdered sugar.
Place cookies on a cooling rack and let cool completely.
Roll in powdered sugar again then serve or store in a sealed container.

❤️This week marks 2 years since our beloved cocker spaniel Dylan passed away. I created this free printable Rainbow Bridge poem on the blog in honor of Dylan. It can be customized with your pet's photo and would be a cherished framed gift for someone who has lost a special pet. #rainbowbridge #doglove #dogheaven #rip #mydog #neverforgotten #rainbowbridge🌈

Happy Birthday to my Mom! We were lucky this year to be together (finally!) to celebrate. We started with a delicious brunch at @sybillstj and then enjoyed the gorgeous sunny day with a walk around Meremac Springs. It was a great day with some of my favorite people! #mymom #birthday #happybirthday #missourilife

🌯Late #CincoDeMayo post! My first visit to @forttacostl last night was delicious! I tried a variety and loved it all. They were out of pork but that gives me an excuse to go back and try the al pastor pork and homemade sauce next time!

We spent Earth Day 2022 in Springfield at the picnic and a movie event in the gardens. It was the perfect sunny afternoon with a breeze and we shared a delicious charcuterie picnic and watched "Bee Movie". The girls did crafts, played in the park, listened to speakers and poetry, and @theparkboard gave us a tree to take home. We had a great time and everyone slept the whole drive home (except Mom)! #earthday2022 #springfieldmo #missourilife #movienight #earthday #picnic #familyfun
