Asian Ramen Slaw

My family and I love easy side dishes, especially kid friendly ones. We eat a lot of salads like coleslaw and potato salad so for dinner this week I decided to make a fun twist on our traditional coleslaw and add Asian flavors. Instead of the regular creamy dressing, I made a vinaigrette and then I added almonds, onions, and -get this- uncooked ramen noodles- for a crunch factor. It was a hit with the whole family and perfect for busy weeknight meals and potlucks.

Asian Ramen Slaw

Makes 6 servings

Ingredients

  • 1 14 ounce package shredded coleslaw mix
  • 1 3 ounce package ramen noodles
  • 3 green onions diced
  • 1/4 cup slivered almonds

For the dressing:

  • 1/3 cup vegetable or canola oil
  • 1/3 cup rice vinegar
  • 1/3 cup brown sugar
  • 1 tbsp soy sauce

Instructions

  • In a small bowl, add all dressing ingredients. Mix well and set aside.
  • In a large bowl, add coleslaw mix, sliced green onions, and almonds.
  • Crush the ramen noodles into small pieces in the package then open and add on top of salad. Discard flavor packet.
  • Pour the dressing on top and mix well.
  • Cover and refrigerate until ready to serve. Toss again before serving.
Start by making the dressing for the slaw with four simple ingredients.
I like using brown sugar in many of my sauces and dressings
 instead of white sugar for a little less sweetness and a slight molasses flavor.
In a small bowl, add all dressing ingredients. Mix well and set aside.
I use prepacked shredded coleslaw mix (cabbage and carrots}
 to save time but you could chop your own.
Add diced green onions to the slaw mix in a medium bowl.
Next add slivered or sliced almonds to the bowl.
Remember ramen noodles from your poor college student days?
I sure do!
 Use one package of noodles and crush them up into bite size bites in the package.
Sprinkle the crushed up noodles into the slaw.
{Discard the seasoning pack}. 
Pour the dressing on top of everything.
Mix well.
Cover and refrigerate until ready to serve. 
Toss again before serving.
This slaw is perfect for potlucks, 
served in a large bowl or in small mason jars to take on a picnic or to lunch!

🦀 Check out our lunch yesterday at my parents favorite local spot, @soiasianbistro . We tried a variety of items off of their massive updated menu.
🍣 The sushi was by far the best thing we ordered. Another must try is the Shiso Mono appetizer, which is tempura fried Japanese basil leaves stuffed with spiced tuna. 
🍤 We also ordered cucumber salad, pork ramen, udon noodles, and chicken katsu curry. All were tasty and big enough to share with the sushi appetizer. 
🍜 I recommend checking out Soi Bistro if you are in town and enjoy fresh seafood and Asian dishes like we do. But save it for a date night or special occasion b/c their price point was pretty high for a casual meal. ❤

It's one of those days...furnance went out (but was fixed), kids took over my bed, husband had to leave early for work, dog barked non stop, and it's a snow day... again.
