Cheesy Minion Quesadillas

It’s Minion Madness week here in our household with the new Minion movie out this weekend! 
Ava has loved minions since we watched the first Despicable Me movie when she was a baby and we even threw her a Despicable Me 1st Birthday Party! 
 
 
To celebrate the new movie {which of course we are seeing in the theater ASAP!} I made a minion inspired lunch for my little sweetie. This idea was inspired by another blogger, Parrish at Lifewiththecrustcutoff.com who made a similar minion pizza but Ava loves quesadillas, so I decided to switch it up and make a extra cheesy, turkey filled, olive topped Minion Quesadilla!

Cheesy Minion Quesadillas

Makes 4 kid size quesadillas

Ingredients

  • 8 small taco size flour tortillas
  • 2 1 oz black olive single serve cups sliced
  • 8 thin sliced deli turkey
  • 8 slices Cheddar cheese or sub shredded
  • 2 slices Mozzarella cheese
  • 1 cup mixed cheese shredded

Instructions

  • Preheat oven to 300 degrees.
  • Coat a skillet with non stick spray and heat over medium.
  • Add a tortilla, top with 2 slices turkey, and a small handful of shredded cheese (about 1/4 cup), and top with another tortilla.
  • Let cook for a minute then flip over and lightly brown the other side and heat through.
  • Remove to a baking sheet and repeat with remaining tortillas and fillings until you have four quesadillas on a baking sheet.
  • Add 2 pieces sliced cheddar cheese to the top of each quesadilla (I cut one slice in half to try to fill most of the space on the tortilla). Then I cut a circle of sliced mozzarella cheese (I traced the bottom of the olive cup with my knife for the circle) and place that in the center for the eye on each tortilla.
  • Next arrange the sliced olives on top of the cheese to make the minion googles and eye. Then I added half a slice for a smile and a couple chopped pieces on top for hair.
  • Bake at 300 degrees for a few minutes, just enough to melt the cheese.
  • Let cool slightly then cute into triangles and serve.

Any soft flour tortilla will work but I love these soft and fluffy small tortillas.

Add a tortilla and top with 2 thin slices of deli turkey.
Add a small handful of shredded cheese (about 1/4 cup) on top.
Top with another tortilla. 
 Let cook for a minute then flip over and lightly brown the other side and heat through.
Remove to a baking sheet and repeat with remaining tortillas and fillings until you have four quesadillas on a baking sheet.

We love snacking on olives so I buy these 1oz cups.
 I used two of these cups and sliced the olives to make the minion face and googles.
Simply lay the sliced olives on top of the cheese to make the minion googles and eye. Then I added half a slice for a smile and a couple chopped pieces on top for hair. 
Bake at 300 degrees for a few minutes, just enough to melt the cheese.
I tried this with both sliced cheese and shredded and I like the look
of the melted sliced cheese better but both turned out cute! 
Let cool slightly then cute into triangles and serve. 
Ava likes to dip hers in honey mustard!
