Coconut Chocolate Chip Cookie Dough Popsicles -Dairy Free, Gluten Free, & Vegan using Hail Merry Bites!

When you think of summertime what is the first treat to come to your mind? For my family it’s Popsicles! We love to make our own, usually with fresh pureed fruit or yogurt. They are made even easier if you have a Popsicle maker like a Zoku {best Christmas gift ever for my girls!}. Today I am sharing a delicious 3 ingredient Popsicle recipe but with a twist! This version is dairy free, gluten free, and vegan. But you would never know because they are the smoothest, creamiest, delicious Popsicles around.
 I was lucky enough to receive a awesome sample box from Hail Merry and momsmeet.com last month. Their tasty Merry Bites come in a variety of flavors and are rich and decadent but -get this- they are made with organic coconut oil so they are raw, vegan, gluten free, and dairy free! 
My family and I devoured all the treats but luckily I was able to save a pack of their Chocolate Chip Cookie Dough Merry Bites to add to my Dairy Free Popsicles! 
How amazing does all this look?!

A little more about Hail Merry.

Ingredients:

Makes 6 standard size pops
  • 1 cup Coconut Milk or Almond Coconut Milk Blend
  • 1.2 of a 5.3oz cup Dairy Free Vanilla Soy Yogurt 
  • 4 Hail Merry Chocolate Chip Cookie Dough Merry Bites, roughly chopped

Directions:

  1. In a bowl blend together the coconut milk and yogurt until smooth.
  2. Sprinkle 1/2 the chopped Merry Bites into the bottom of six popsicle molds.
  3. Pour the coconut mixture into each mold, filling almost to the top.
  4. Sprinkle in the rest of the chopped Merry Bites. 
  5. Add sticks or secure the bottoms to each popsicle and place into the freezer or popsicle machine to freeze. This could take a few hours or up to overnight.
  6. When frozen, remove each popsicle and enjoy!
These popsicles are made with just 3 ingredients -Coconut Almond Milk, Soy Vanilla Yogurt, and Hail Merry Chocolate Chip Cookie Dough Merry Bites!
Merry Bites are available in six decadent flavors, including
Chocolate Chip Cookie Dough, Caramel Sea Salt, Salted Brownie,
Pure Vanilla Macaroon, Lemon Macaroon, and Dark Chocolate
Macaroon. I used my favorite, the chocolate chip cookie dough, in these popsicles. 
Chop up 3-4 Hail Merry Chocolate Chip Cookie Dough Merry Bites. 
I may have sneaked a piece or two.
In a bowl or cup blend together the coconut milk and yogurt until smooth.
I use my emersion blender but a regular blender would work too. 
You want the mixture well combined and smooth.
I use my Zoku Popsicle Maker. You simple freeze the base for 24 hrs. 
Then the popsicles freeze in 7 minutes. 
You can also pour into traditional popsicle molds and place in the freezer overnight. 
Sprinkle 1/2 the chopped Merry Bites into the bottom of six popsicle molds.
Pour the coconut mixture into each mold, filling almost to the top.
Sprinkle in the rest of the chopped Merry Bites. 
Add sticks or secure the bottoms to each popsicle and place into the freezer or popsicle machine to freeze. This could take a few hours or up to overnight.
When frozen, remove each popsicle and enjoy!
You can even drizzle with chocolate for more yumminess!
These popsicles are sweet, flavorful, and a delicious cold treat to enjoy on a hot summer day!
