Dr Seuss Green Eggs Pudding

It’s Dr. Seuss Week and in honor of our favorite children’s book author I am sharing this adorable throwback recipe.

This easy pudding treat is shaped like a colorful green egg inspired by Green Eggs and Ham by Dr. Seuss.

Real green eggs and ham lunch with a story for my littles years ago!

We love this book and the moral of the story which is don’t make up your mind about something without trying it.

My little foodies have always been great with this!

Green Eggs Pudding

Makes 4 servings

Ingredients

  • 3 oz box instant pudding mix I used pistachio
  • 2 cups milk
  • 4 vanilla wafer cookies
  • colored sprinkles
  • green food coloring optional

Instructions

  • Add pudding mix and 2 cups cold milk to a large mixing bowl.
  • Whisk well until combined. If you are using vanilla or a light color pudding you need to add food coloring now to make it green or just use pistachio flavor like I did!
  • Place the bowl of pudding the fridge 5 minutes to set.
  • When ready to serve, scoop about 1/2 cup onto a small plate, spreading it in a circle shape to make the "egg".
  • Top with a vanilla wafer in the center of each plate of pudding as the "yolk".
  • Add sprinkles all over and serve this treat to your hungry kiddos while you read them "Green Eggs and Ham".

I use 3oz pistachio instant pudding mix for this recipe.

Or you can use vanilla or another light colored flavor and add green food coloring too.

Make pudding according to package then add 1/2 cup to a small plate, spreading into a circle shape for the “egg”.

Top with a vanilla wafer in the center as the “yolk” and add sprinkles all over. 

This recipe is enough to make 4 plates. Serve and enjoy!
