Gingerbread Reindeer Cake Cookies

This Christmas season seemed more hectic than the past years. Maybe because I had a trip to plan and pack for or maybe because this year I had a toddler and a preschooler running around. Or maybe the holidays in general seem to just be busy and hectic always. But no matter how busy it gets, I always make time for those special traditions and moments with my family, especially my two girls.
 One of my favorite Christmas activities is baking cookies and treats with Ava and Stella. This year to save time we used a boxed gingerbread cookie mix and a silicone gingerbread man baking mold to make Gingerbread Reindeer Cake Cookies for our friends and family. The girls especially loved decorating the gingerbread cookies to look like reindeer faces!

We had a great time making and eating our Christmas pancake breakfast too!

Gingerbread Reindeer Cookies

Makes 30 mini cookies

Ingredients

  • 1 box Gingerbread Cookie Mix {I used Krusteaz}
  • Ingredients required on the back of the box {butter and eggs}
  • red and brown M&M candy {or similar}
  • black decorating frosting
  • 60 candy eyes

Instructions

  • Prepare gingerbread cookie mix according to the package.
  • Spoon batter into a greased baking mold or 8×8 dish.
  • Bake according to package. I baked at 350 degrees for 7-10 min.
  • Let cool slightly then remove from the pan and cool completely on a cooling rack.
  • To decorate flip the gingerbread men over so you have a reindeer face. Add two dots side by side on top for the eyes then one large dot in the middle for the nose and then draw a mouth underneath with the black frosting.
  • Press two candy eyes on top of the two dots of frosting then add a red or brown M&M candy in the center for the eyes.
  • You can also draw additional lines with the black frosting to outline the antlers .
  • Let dry completely then wrap up for friends and family.

I used this Krusteaz brand gingerbread cookie mix for this recipe.  
Prepare cookie mix according to package. Mine required butter and eggs.
I used these silcone Gingerbread men treat molds for these cake cookies. They made them have a soft cake texture with a crispy cookie edge. I found this mold around Christmas time at Michael’s.
Push cookie dough mixture into the molds, filling completely. 
Push down to make sure all parts of the molds are filled.
You can also use an 8×8 pan and a gingerbread mini cookie cutter but you will not get the same cake like texture.
Once the cookies are baked according to the package instructions (usually 7-10 mins at 350 degrees) let them cool completely then it’s time to decorate.
To decorate flip the gingerbread men over so you have a reindeer face. My little helper Ava was so proud of her cookies! 
Let them dry completely then package up to give as gifts to friends and family.

One of my favorite quiet spots in all of Missouri - beautiful Roubidoux Springs in Waynesville, MO. We spent so many afternoons here fishing, splashing, hunting for treasures, skipping rocks, having picnics, and cuddling our dogs.
