Green Eggs and Ham Omelet for Dr Seuss Day!

Today, March 2, is Dr Seuss Day and in honor of the amazing author we all love my kiddos and I decided we should have breakfast for dinner! Green Eggs and Ham is our traditional meal on this fun day but I decided to make it extra special by making an extra fluffy, cheesy omelet for my girls to share!

My sweet little Stella when she was just a tiny thing!
 Last year we had a green eggs and ham lunch and story with Daddy on his lunch break.
Love these memories!

Green Eggs and Ham Omelet

Makes one large omelet

Ingredients

  • 3 eggs
  • 2 tbsp milk
  • 1/4 cup mozzarella cheese shredded
  • 1/3 cup {about 2 slices}deli ham chopped
  • 4-5 drops green food coloring
  • non stick spray
  • additional cheese for topping

Instructions

  • In a medium bowl add eggs and milk and whisk until beaten.
  • Add food coloring and stir until completely green. Set aside.
  • Heat a large skillet over medium heat.
  • Coat with non stick spray.
  • Once the skillet is hot add the beaten egg mixture and cook, tipping pan to cook eggs, until halfway cooked and sides start to rise from the pan.
  • Sprinkle on ham and cheese then fold half of the omelet over.
  • Gently flip over with a spatula and cook the rest of the runny egg then slide onto a plate.
  • Sprinkle with additional cheese and serve warm.

Pour egg mixture into a greased medium skillet heated over medium heat.
Tip pan to cook eggs, until halfway cooked and sides start to rise from the pan.
 Add chopped ham.
Then top with shredded cheese. 
 Fold the omelet in half and gently flip over with a spatula.
Cook the rest of the runny egg then slide onto a plate.
 Sprinkle with additional cheese and serve warm. 

Story time after dinner! 
The girls get a kick out of eating the meal from the book every year!
