It’s #RecipeMakeover Week! All week long I am sharing some of my favorite comfort food dishes- made over and made healthier! This Healthy and Hearty Breakfast Casserole features sweet potato, spinach, and lean turkey baked together with eggs and low fat cheese.
 It’s a crowd pleaser for sure!

Healthy and Hearty Breakfast Casserole

Makes 9 servings

Ingredients

  • 1 lb lean turkey sausage crumbled
  • 8 eggs beaten
  • 1/2 small sweet potato peeled and sliced thin
  • 1 cup spinach roughly chopped
  • 1/2 small yellow onion diced
  • 1 cup low fat {or fat free} cheddar cheese shredded
  • salt & pepper to taste

Instructions

  • Preheat the oven to 375 degrees.
  • Heat a large skillet over medium heat and add turkey. Crumble and cook until browned and cooked through. Season with salt and pepper.
  • Grease an 8x8 baking dish and line the bottom with the sliced sweet potatoes. I had 9 sweet potato rounds.
  • In a medium bowl beat the eggs and season with salt and pepper.
  • Add the shredded cheese to the eggs and mix well.
  • Pour the beaten eggs in the dish, on top of the sweet potatoes.
  • Add the cooked turkey sausage on top.
  • Then sprinkle spinach and onion on top of that.
  • Bake for 35 to 40 minutes or until set.
  • Cut into 9 square servings and serve warm.

I use lean ground turkey sausage for this casserole.
I love the flavor and it barely has any grease or fat!

eat a large skillet over medium heat and add turkey. Crumble and cook until browned and cooked through. Season with salt and pepper.

You need 9 thin slices of a peeled sweet potato.

 I wrapped the rest of my sweet potato in aluminum foil and baked it
next to the casserole to have later.

Grease an 8×8 baking dish and line the bottom with the sliced sweet potatoes.

Dice 1/2 a sweet yellow onion.

In a medium bowl beat the eggs and season with salt and pepper.

Add the shredded cheese to the eggs and mix well.

Pour the beaten eggs in the dish, on top of the sweet potatoes.

Add the cooked turkey sausage on top.

Then sprinkle spinach and onion on top.

Bake for 35 to 40 minutes or until set.

 

Cut into 9 square servings and serve warm.

My family and I had the pleasure of experiencing this nighttime interactive exhibit at @crystalbridgesmuseum last week. It was unlike anything we have ever done before and we spent two fun filled hours exploring the lighted forest and all the lights, music, sculptures, and sounds within. Hands down one of the best experiences we have had so far in Arkansas!

It's #WhatchaReadingWednesday (a day late, whoops!). I was so excited to find this Choose Your Own Adventure book at @samsclub and it's a #StrangerThings story! I loved these books growing up and I am super excited they are making a comeback.
