Hot Cocoa Truffles

I don’t know about y’all but sippin’ a cup of hot cocoa while looking at Christmas lights is one of my very favorite things to do during the holiday season! Growing up my family and I always drove to different farms and churches and walked around to see the beautiful light displays for Christmas. Of course, it wasn’t complete without a cup of hot chocolate to sip on while we enjoyed the lights and each other’s company. 
Now I am a Mom and I have passed on this favorite tradition to my kids. We love Christmas lights and y’all know we love hot cocoa! Stephen’s Gourmet is my favorite brand for rich hot cocoa and today I am sharing these delicious and decadent Hot Cocoa Truffles made with cocoa mix, marshmallows, and melted chocolate chips. They are an easy no bake treat to make as gifts for the holidays! 

I love hot chocolate no matter the flavor
 but my favorite is traditional Stephen’s Gourmet Milk Chocolate flavor
and that is what I used for these decadent truffles. Stephen’s also offers a special selection of delicious ciders, whose traditional (and not-so-traditional) flavors make the perfect drink for any holiday.

Hot Cocoa Truffles

Ingredients

  • 1 1/2 cups Stephen's Gourmet Milk Chocolate Cocoa Mix
  • 2 cups semi sweet or milk chocolate chips
  • 8 oz cream cheese softened
  • 1/2 cup mini marshmallows
  • chocolate sprinkles optional

Instructions

  • Add the chocolate chips to a medium bowl and microwave until melted, stirring after every 30 seconds . Set the chocolate aside and let it cool slightly.
  • Add the softened cream cheese and 1 cup hot cocoa mix to a large mixer bowl.
  • Mix on medium speed until combined.
  • Pour in the melted chocolate and mix until smooth.
  • Add the marshmallow and gently stir in with a spatula.
  • Cover the bowl and refrigerate for an hour, until it is firm.
  • Add the remaining 1/2 cup cocoa mix to a plate.
  • Remove the chocolate mix from the fridge and scoop out 1-inch balls using a small scoop.
  • Roll the balls in the cocoa mix and place them onto a parchment lined baking sheet.
  • You can also add sprinkles to the top of the truffles too.
  • Place the baking sheet of truffles back into the fridge for at least 1 hour to harden.
  • Serve chilled or at room temp and enjoy these decadent treats!

Start with 2 cups chocolate chips.
Melt in the microwave in 30 second intervals until smooth.
I am a sucker for classic flavors like good ol’ Milk Chocolate Cocoa. 
Stephen’s is the best -creamy and rich!
Add softened cream cheese to a mixer bowl.
Pour in 1 cup cocoa mix and beat until smooth.
Now add the melted chocolate chips and beat until combined.
Stir in the mini marshmallows with a spatula.
Cover the bowl and refrigerate for an hour. 
Add the remaining 1/2 cup cocoa mix to a plate.
I also use chocolate curls and sprinkles on some truffles too.
Remove the chocolate mix from the fridge and scoop out 1-inch balls using a small scoop. 
Roll the balls in the cocoa mix and place them onto a parchment lined baking sheet. 
I rolled half in cocoa mix and half in unsweetened cocoa powder.
Place the baking sheet of truffles back into the fridge for at least 1 hour to harden. 
Serve chilled or at room temp and enjoy these decadent treats!
