Hot Cocoa Truffles

This content is sponsored by Stephen’s Gourmet Hot Chocolate and Mom It Forward Influencer Network, but views and thoughts are my own.

I don’t know about y’all but sippin’ a cup of hot cocoa while looking at Christmas lights is one of my very favorite things to do during the holiday season! Growing up my family and I always drove to different farms and churches and walked around to see the beautiful light displays for Christmas. Of course, it wasn’t complete without a cup of hot chocolate to sip on while we enjoyed the lights and each other’s company.
Now I am a Mom and I have passed on this favorite tradition to my kids. We love Christmas lights and y’all know we love hot cocoa! Stephen’s Gourmet is my favorite brand for rich hot cocoa and today I am sharing these delicious and decadent Hot Cocoa Truffles made with cocoa mix, marshmallows, and melted chocolate chips. They are an easy no bake treat to make as gifts for the holidays!

I love hot chocolate no matter the flavor
but my favorite is traditional Stephen’s Gourmet Milk Chocolate flavor
and that is what I used for these decadent truffles. Stephen’s also offers a special selection of delicious ciders, whose traditional (and not-so-traditional) flavors make the perfect drink for any holiday.

Here are some of my other favorite signature cocoa flavors from Stephen’s Gourmet:

  • Salted Caramel
  • CandyCane
  • Mint Truffle
  • Dark Chocolate
  • S’mores
They are continually introducing new and unique flavors, as well as cocoa innovations like single-cups for Keurig®-style coffee makers.

Ingredients:

  • 1 1/2 cups Stephen’s Gourmet Milk Chocolate Cocoa Mix
  • 2 cups semi sweet or milk chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup mini marshmallows
  • chocolate sprinkles, optional

Directions:

  1. Add the chocolate chips to a medium bowl and microwave until melted, stirring after every 30 seconds . Set the chocolate aside and let it cool slightly.
  2. Add the softened cream cheese and 1 cup hot cocoa mix to a large mixer bowl.
  3. Mix on medium speed until combined.
  4. Pour in the melted chocolate and mix until smooth.
  5. Add the marshmallow and gently stir in with a spatula.
  6. Cover the bowl and refrigerate for an hour, until it is firm.
  7. Add the remaining 1/2 cup cocoa mix to a plate.
  8. Remove the chocolate mix from the fridge and scoop out 1-inch balls using a small scoop.
  9. Roll the balls in the cocoa mix and place them onto a parchment lined baking sheet.
  10. You can also add sprinkles to the top of the truffles too.
  11. Place the baking sheet of truffles back into the fridge for at least 1 hour to harden.
  12. Serve chilled or at room temp and enjoy these decadent treats!

Start with 2 cups chocolate chips.
Melt in the microwave in 30 second intervals until smooth.
I am a sucker for classic flavors like good ol’ Milk Chocolate Cocoa.
Stephen’s is the best -creamy and rich!
Add softened cream cheese to a mixer bowl.
Pour in 1 cup cocoa mix and beat until smooth.
Now add the melted chocolate chips and beat until combined.
Stir in the mini marshmallows with a spatula.
Cover the bowl and refrigerate for an hour.
Add the remaining 1/2 cup cocoa mix to a plate.
I also use chocolate curls and sprinkles on some truffles too.
Remove the chocolate mix from the fridge and scoop out 1-inch balls using a small scoop.
Roll the balls in the cocoa mix and place them onto a parchment lined baking sheet.
I rolled half in cocoa mix and half in unsweetened cocoa powder.
Place the baking sheet of truffles back into the fridge for at least 1 hour to harden.
Serve chilled or at room temp and enjoy these decadent treats!
Rich and delicious- just like hot cocoa!
I love giving a few of these in gift boxes as gifts for teachers, coworkers, and friends during the holidays!

YUM. To me, nothing says winter like hot chocolate, but that's not always the most convenient snack or gift — thanks for sharing this!!

🍜 We had so much fun celebrating Lunar New Year last weekend with dinner at @pho_85_noodle_house_llc in Bentonville, AR! The Banh Mi sandwich and Beef and Seafood Pho soups were filled with fresh ingredients and flavor packed. As you can see their portions were huge so it's a great place to share! We also tried an appetizer sampler, Thai Tea, Coconut Boba Smoothie (my girls' favorite) and macarons for dessert. Everything was made to order and delicious. The staff was kind and helpful.
