Old Fashioned Iced Oatmeal Raisin Cookies

It’s cookie time again! 
Ava and I love to bake together and we found another recipe 
from her Mouse Cookies cookbook we wanted to try {and add our own twist too}.
 These Old Fashioned Iced Oatmeal Raisin Cookies came out just right – flavor packed with a hint of ginger and cinnamon and perfectly soft and chewy. They are best served warm or try them crumbled on top of ice cream or yogurt!

These cookies were baked for us when we stayed at the Steel Magnolia Bed and Breakfast in Nachitoches, LA. Ever since then I have been looking for a similar recipe!
Mouse Cookies Cookbook
Recipe from the Mouse Cookies cookbook, inspired by Ava’s favorite storybook: If You Give a Mouse a Cookie.

Ingredients:

Makes 2-3 dozen cookies
  • I cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • 1/2 tsp ginger
  • 1 cup light brown sugar
  • 1/2 cup raisins
  • 1 egg, beaten
  • 1/4 cup vegetable oil
  • 1/4 cup heavy cream
For the Icing:
  • 1/2 cup powdered sugar
  • 2-3 tbsp milk

Directions:

  1. Preheat oven to 350 degrees. 
  2. Combine flour, salt, baking powder, cinnamon, oats, ginger, brown sugar, and raisins together in a large bowl.
  3. Stir in egg, vegetable oil, and cream.
  4. Stir until the batter is gooey and thick.
  5. Drop batter by teaspoons onto a greased or lined cookie sheet.
  6. Bake for 10-12 minutes.
  7. Let cool slightly then remove to a cooling rack.
  8. Bake remaining cookies. 
  9. For the icing: mix together powdered sugar and milk in a small bowl.
  10. Add more milk if needed for a smooth consistency.
  11. Using a spoon drizzle over cooled cookies.
  12. Let icing hard then serve or store in an airtight container.

Combine flour, salt, baking powder, cinnamon, oats, ginger, 
brown sugar, and raisins together in a large bowl.

Stir in beaten egg and vegetable oil.
Add heavy cream.
Mix well until the batter is gooey and thick.
You can taste hints of Ginger and Cinnamon
 spices in this delicious, chewy cookies. 
I know I have said it before but how cute is my little helper?!

I use my hand and a scoop to form balls of dough and drop 12-15 on a lined cookie sheet. 
Bake at 350 degrees for 10-12 minutes.
Remove from oven and let cool on a cooling rack while
 you bake the rest of the cookies.
To make the icing simply mix together powdered sugar and milk.
Add more milk if needed until icing is smooth. 
Using a spoon or fork, drizzle icing over cooled cookies.
Let icing harden slightly before serving. 
I like to serve these warm or crumbled on top of yogurt or ice cream! Enjoy!

🍓 Today is National Pick Strawberries Day. Going to local farms and picking fresh produce is one of our favorite family traditions. We were lucky enough to go strawberry picking at @eckertfarms last weekend. It was the biggest farm we have ever been to and quite a memorable experience! We left with a basket full of fresh juicy berries, strawberry cider and pastries from the market, and soaking wet clothes (but smiles on our faces).
