Pampers Cruiser Diapers and Mac and Cheese Cupcakes

Mac and Cheese is no doubt the most requested food from my toddler, Ava and I’m sure when her baby sister Stella is older she will be a big fan too! So when I was brainstorming kid friendly recipe ideas last week I decided to create a fun twist on regular ol’ mac and cheese- by baking them in a muffin tin and calling them Mac and Cheese Cupcakes! I even topped them with breadcrumb “sprinkles”! They were a hit with my little foodie {and Mom and Dad too}!
 I hope you and your little ones enjoy too!
Before I share the recipe with y’all let me tell you about a product that we love for our little ones here in our home: Pampers Cruisers Diapers! We have been Pampers users for years, ever since Ava was born. Now baby Stella, at 5 months old, is rolling, scooting, standing, and sitting and I have had to switch her daytime diapers from Swaddlers to Pampers Cruisers.

Mac and Cheese Cupcakes

Makes 12 cupcakes

Ingredients

  • 8 oz macaroni pasta
  • 1 cup Cheddar cheese shredded
  • 1 cup Mozzarella cheese shredded
  • 1/4 cup flour
  • 5 tbsp butter
  • 2 cups milk
  • 1 tsp mustard powder
  • salt/white pepper to taste
  • 1/4 cup plus 1 tbsp Parmesan grated
  • 1/4 cup panko breadcrumbs

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a muffin tin or line with cupcake liners (I used silicone ones).
  • Boil the pasta according to package directions, about 8-10 minutes. Drain and set aside.
  • Over medium heat, melt 4 tablespoons butter.
  • Add the flour and dry mustard. Stir constantly over medium heat for about three minutes until darkened and a roux is formed.
  • Whisk in the milk.
  • Turn heat to medium low and let simmer until sauce thickens, whisking often, about 10 minutes.
  • Remove from heat, and stir in 2 cups shredded cheese and 1/4 cup Parmesan, stirring until melted. Season with salt and white pepper.
  • Now add the cooked noodles and toss gently until all noodles are covered.
  • In a small bowl mix together remaining 1 tbsp Parmesan cheese, 1/4 cup breadcrumbs, and 1 tbsp melted butter.
  • Spoon macaroni into the prepared muffin tin. Sprinkle the breadcrumb topping over the tops of the cupcakes.
  • Bake for about 25 minutes, until lightly browned.
  • Remove from oven, let cool slightly before removing from the pan.

Add the flour and dry mustard.

Shred 2 cups cheese. I chose Cheddar and Mozzarella. 
Remove from heat and stir in 2 cups shredded cheese.

Whisk until all the cheese is melted. Season with salt and white pepper.
Now add the cooked noodles to the pan.
Toss gently until all noodles are covered.
 
In a small bowl mix together remaining 1 tbsp Parmesan cheese and 1 tbsp melted butter.

Add 1/4 cup breadcrumbs and stir together.

Spoon macaroni into the prepared muffin tin.

Sprinkle the breadcrumb topping over the tops of the cupcakes.

Bake for about 25 minutes, until lightly browned.

Remove from oven, let cool slightly before removing from the pan.

    As a parent, I have many baby care products in my home, but the most needed product is a baby diaper. So, I would choose the best quality diapers mostly disposal diapers, it offers a good comfort to our baby and helps to keep their skin soft and dry. Thanks for reviewing this baby product. I would like to use this product for my baby and hope to get a better result.
