Emeril Lagasse's Strawberry Lemonade

Summer may be ending soon but it’s still hot here in Louisiana. To me, there is nothing better on a hot day than a refreshing glass of fresh squeezed Strawberry Lemonade. I have made this easy drink recipe many times for parties and it’s always a hit! I have adapted it from a recipe by my favorite Southern Chef, Emeril Lagasse.

Even though Strawberry Lemonade is a tasty treat, it is awfully sweet and uses a hefty 1 cup of sugar along with the sweet cut fruit. So I decided to make a change and sweeten it with Born Sweet® Zing™ Zero Calorie Stevia Sweetener instead of sugar.

I swear y’all, it tastes just as delicious and sweet with a lot less calories!

Ingredients:

  • 2 cups water
  • 1 1.4 oz box Zing™ Zero Calorie Stevia Sweetener (approx. 1 cup)
  • Zest from one lemon
  • 1 cup fresh lemon juice
  • 1 pint fresh strawberries, destemmed and halved
  • 2 cups cold sparkling water 
  • Ice

Directions:

  1. In a medium saucepan, bring the water and Zing™ Zero Calorie Stevia Sweetener to a boil.
  2.  Reduce the heat and simmer, stirring occasionally, until the Zing™ Zero Calorie Stevia Sweetener dissolves. 
  3. Add the lemon zest and lemon juice, stir, and remove from the heat. 
  4. Let cool completely, then pour into a clean pitcher (strain if needed).
  5. In a blender or food processor, puree the pint of strawberries and add to the pitcher with the lemon juice. 
  6. Stir well to combine and refrigerate until well chilled.
  7. Add the sparkling water and stir well. 
  8. Pour over glasses filled with ice and serve.

Zing™ Zero Calorie Stevia Sweetener is the 
perfect addition to this refreshing summer drink!
Fresh sweet strawberries all ready to puree!
I opened and combined all the packets of Zing™ Zero Calorie Stevia Sweetener in a small bowl.
 It should be about 1 cup of sweetener.
In a medium saucepan, bring the water and 
Zing™ Zero Calorie Stevia Sweetener to a boil.
Slice and squeeze a bag of lemons until you have 1 cup fresh lemon juice. 
 Reduce the heat and simmer, stirring occasionally, 
until the Zing™ Zero Calorie Stevia Sweetener dissolves. 
Zest a lemon and add to the saucepan. 
You should have about 1 tbsp.
Remove from heat and let cool completely.
Destem and slice strawberries.
In a blender or food processor, puree the pint of strawberries.
I could eat this with a spoon. 
Sweet pureed strawberries are a delicious treat!
Mix together the lemon juice and strawberry puree.
Stir well to combine and refrigerate until well chilled.

🍜 We had so much fun celebrating Lunar New Year last weekend with dinner at @pho_85_noodle_house_llc in Bentonville, AR! The Banh Mi sandwich and Beef and Seafood Pho soups were filled with fresh ingredients and flavor packed. As you can see their portions were huge so it's a great place to share! We also tried an appetizer sampler, Thai Tea, Coconut Boba Smoothie (my girls' favorite) and macarons for dessert. Everything was made to order and delicious. The staff was kind and helpful. 🌟I had to step out of my comfort zone today and attend my first networking event since moving to Arkansas. I already  struggle with meeting new people and being social since I work from home but now I live in a new city and know no one. Thank goodness I found @winnwa . The networking lunch today at @bonefishgrill was exciting, encouraging, and of course, fun!
