Peeps Easter Bunny Pudding Cups

It’s almost Easter time and I wanted to create a fun dessert with my daughter featuring one of our favorite Easter treats: Peeps Marshmallow Bunnies!
We came up with these Peeps Easter Bunny Pudding Cups and I love how these cute dessert turned out. We took them over to Ava’s friend’s house and they all enjoyed the Peep Easter Bunny and eating the chocolate cake “dirt”, the pudding and coconut “grass”, and finding the hidden Easter egg candies.

My little love and I had such a fun time making these pudding cups for our friends. 
I really enjoy spending time with my kids in the kitchen and easy kid friendly recipes like this one are perfect for making memories together in the kitchen.

What the Peep Blog Hop & #Giveaway! #Win a Target gift card!

Ingredients:

Makes 8 pudding cups

  • 8 Peeps Bunnies, multiple colors
  • Chocolate cake mix
  • 1 oz pkg instant Pistachio flavored pudding
  • 32 Mini Robin Eggs chocolate candies
  • 1 cup shredded coconut
  • green food coloring
  • Easter themed sprinkles, optional

Directions:

  1. Bake the chocolate cake, I made mine the night before. I made 2 round 8 inch cakes and used one for this recipe and I frosted and served the other. 
  2. Prepare pudding according to package instructions and place in the fridge to chill.
  3. Once cooled, use a fork and crumble the 8 inch cake in the pan.
  4. Pour the cake crumbles into a bowl and set aside. 
  5. Add shredded coconut to a baggie or bowl and add 2 drops of green food coloring. Stir until the coconut is bright green. 
  6. To assemble the pudding cups, start with small clear drink cups.
  7. Add a couple spoonfuls of cake crumbles to each cup then two Robin Egg candies on each.
  8. Add another spoonful or two of cake and then few Robin Egg candies.
  9. Top with a couple spoonfuls of green pudding. Smooth out and cover the cake.
  10. Sprinkle with green coconut and add a few Easter themed sprinkles if you’d like. I had bunny and carrot shaped sprinkles that looked super cute. 
  11. Finally, top each cup with a Peep Bunny. I used 4 different color Peeps to top my different pudding cups. 
  12. Serve right away if you can or chill until serving. 
Happy Easter!

Add a few Easter themed sprinkles on top if you’d like. 
Top with the Easter sprinkles on the coconut “grass”.
Now it’s time for the Peeps Bunnies!
I used four different colors of Peeps, two of each color.
Place one bunny on top of each pudding cup.

Your kids and their friends will love finding the hidden eggs in the dirt and grass!
Serve right away and enjoy.

Final Florida lunch with my Dad at a local hotspot: @stewbyseafoodshanty on Okaloosa Island. They have multiple locations but this one is by far my favorite. New, clean, beautiful scenery, and lots of space inside and outside.

I could eat here every day. Their seafood is the BEST. For lunch we tried their grilled grouper sandwich and seafood combo plate with amberjack, grilled shrimp, fried oysters, and all the sides and sauces to go with it (check out those scrumptious cheese grits)!

Next door they have a seafood market, gift shop, and new steamer restaurant with steam buckets of shrimp, crab, and flounder with all the fixins. ⬅️ I know what I am ordering next time! Their motto: local fish at local prices. Check them out and thank me later.

🦀 Check out our lunch yesterday at my parents favorite local spot, @soiasianbistro . We tried a variety of items off of their massive updated menu.
🍣 The sushi was by far the best thing we ordered. Another must try is the Shiso Mono appetizer, which is tempura fried Japanese basil leaves stuffed with spiced tuna. 
🍤 We also ordered cucumber salad, pork ramen, udon noodles, and chicken katsu curry. All were tasty and big enough to share with the sushi appetizer. 
🍜 I recommend checking out Soi Bistro if you are in town and enjoy fresh seafood and Asian dishes like we do. But save it for a date night or special occasion b/c their price point was pretty high for a casual meal. ❤
