Pepperoni Pizza Poppers

My friend Molly shared this addictive recipe with me and I must say I’m hooked! 
These bite size Pizza Poppers are full of flavor and super easy to make! Since I’m in full nesting mode right now I doubled the batch and frozen half for after I have my baby and need a quick meal to reheat. 
 Hope you enjoy these as much as I did!


These Poppers are a hit with both adults and kids and make a tasty game day appetizer!

 Ingredients:

Makes 2 dozen

  • 3/4 cup flour
  • 3/4 tsp baking powder
  • 1 tbs Italian seasoning
  • pinch of salt
  • pinch of red pepper flakes
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 1 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1 cup pepperoni slices, quartered
  • 1/2 cup pizza or marinara sauce, for dipping

Directions: 

  1. Preheat oven to 375 degrees and grease a mini muffin tin.
  2.  Whisk together dry ingredients (flour, baking powder, and seasonings) in a large bowl.
  3.  Whisk in the milk and egg.
  4.  Stir well to combine.
  5. Stir in cheeses and pepperoni.
  6.   Let the batter stand for 10 minutes.
  7.  Give the batter a stir and using a small ice cream scoop or spoon divide among mini muffin cups.
  8.  Pop your Poppers in the oven for 20-25 minutes.
  9.  Serve hot out of the oven with a bowl of warm pizza sauce for dipping.

 Quarter the sliced pepperoni (and try not to snack too much and eat it all like I did!)
 
Stir in cheeses and pepperoni.
 Let the batter stand for 10 minutes.
 Give the batter a stir and using a small ice cream scoop or spoon divide among mini muffin cups.
 Pop your Poppers in the oven for 20-25 minutes.
 They’re ready when they are puffed and golden brown!
 These make a great dinner with a side salad or fun little appetizers!
 Serve hot out of the oven with a bowl of warm pizza sauce for dipping.

🍓 Today is National Pick Strawberries Day. Going to local farms and picking fresh produce is one of our favorite family traditions. We were lucky enough to go strawberry picking at @eckertfarms last weekend. It was the biggest farm we have ever been to and quite a memorable experience!
