Slow Cooker Manwich Cheddar Stuffed Sloppy Joe Meatballs

 To celebrate National Sloppy Joe Day on March 18th, I decided to make a fun take on meatballs – Sloppy Joe Style! Even better, they are super easy using my favorite Manwich Sloppy Joe sauce and cooked in the slow cooker! These mini beef meatballs are filled with gooey cheese and slow cooked for a few hours so they are juicy and delicious!

Manwich has 3 flavors of Sloppy Joe sauce: Original, Bold, and Thick and Chunky.
 I used both Original and Bold (my favorite) for this recipe.

Ingredients:

Makes 50-55 mini meatballs
  • 2 lbs ground beef (I used ground chuck)
  • 2 eggs, beaten
  • 1/4 cup panko breadcrumbs
  • 1/2 yellow onion, grated
  • 3 cloves garlic, pressed
  • 3 cans (12.5 oz) Manwich Sloppy Joe sauce (about 6 cups)
  • 7 cheddar string cheese sticks, chopped into 8 cubes each
  • salt/pepper, to taste

Directions:

  1.  Preheat broiler.
  2. Line a baking sheet with aluminum foil and spray with non stick spray.
  3. In a large bowl mix together ground beef, eggs, breadcrumbs, onion, garlic, and salt and pepper until combined.
  4. Using a spoon or your hands scoop out a small amount and roll into approx a 1 inch ball. 
  5. Press small cube of cheese into the center of each meatball and cover cheese with meat mixture.
  6. Add to the baking sheet and repeat with the remaining meatballs.
  7. Broil for approx 4-6 minutes until browned (they do not have to be fully cooked through). 
  8. Remove from oven and let cool slightly (you can also do these steps a day ahead and store in the fridge).
  9. Add meatballs to a slow cooker and cover with Manwich Sloppy Joe sauce.
  10. Cook on low for 3 hours.
  11. Serve warm in the slow cooker as an appetizer or on add the meatballs and sauce to sub rolls or spaghetti. 
I use traditional ground chuck (hamburger) for these meatballs
 but I think ground pork would be delicious too!

Some cheese may leak out but no worries! They are still just as tasty!
Add meatballs to a slow cooker.
I used both Original Manwich Sloppy Joe Sauce and Manwich Bold Sauce.
Pour 3 cans (approx 6 cups) on top of meatballs and stir to cover.
Cover slow cooker and cook meatballs on low for 3 hours,

Serve warm as a party appetizer in the slow cooker.

These juicy meatballs are oozing with melted cheese and covered in tangy sauce.

You can also serve as a meal (covered in more cheese of course) or on top of toasted sub rolls or spaghetti (Ava’s favorite).

One of my favorite quiet spots in all of Missouri - beautiful Roubidoux Springs in Waynesville, MO. We spent so many afternoons here fishing, splashing, hunting for treasures, skipping rocks, having picnics, and cuddling our dogs.
