Halloween Pasta Salad in a Pumpkin
Halloween is almost here and we have spent all week attending parties, events, and of course trick or treating. I love this time of year and creating fun, kid friendly Halloween recipes is one of my favorite things to do. For Ashton’s work Halloween party I was told to bring a side dish to share. I usually make appetizers and desserts for parties so I had to think a little differently this time and come up with a spooky side item. I decided on a pasta salad and added a “puking pumpkin” to the platter to create a gross out {but fun} Halloween theme. 
 

Around the same time I was coming up with my Halloween recipes, I was asked to create a themed recipe for the #MakeItDelish contest sponsored by Buddig and Old Wisconsin brands. The requirements were to use either a Buddig or Old Wisconsin meat product and a secret ingredient in an original recipe. The #MakeItDelish contest runs from October through December, with a new secret ingredient every month. The best part? There are 3 prizes every month: $250, $500, and $1000 and the grand prize is $10,000 plus $10,000 to a charity!
 
 I decided to incorporate Buddig brand honey ham and Old Wisconsin brand turkey sausage into my pasta salad along with the secret ingredient for October: Frigo cheese sticks. Halloween Pasta Salad in a Pumpkin
Print Recipe

UpChuckin' Pumpkin Loaded Pasta Salad

Ingredients

  • 16 oz box Rotini pasta {I used multicolored vegetable} about 8 cups cooked
  • 1/2-3/4 cup Italian Dressing
  • 1/2 cup roasted red peppers diced
  • 1/2 yellow onion diced
  • 2 oz can black olives sliced
  • 1/2 large cucumber peeled and diced
  • 12 slices Buddig Honey Ham chopped
  • 10 Frigo Wisconsin Cheddar Cheese sticks chopped
  • 1 cup Old Wisconsin Turkey Sausage Sticks sliced thin
  • 1/4 cup Parmesan Cheese grated
  • small pie pumpkin for serving

Instructions

  • Cook pasta according to box directions. Drain.
  • In a large bowl, mix together pasta, veggies, meat, and cheese sticks.
  • Add 1/2 cup Italian dressing and toss to coat.
  • Add additional dressing to taste if needed.
  • Pour into a serving dish.
  • Add grated Parmesan on top.
  • Cover and chill until ready to serve.

Notes

For the Upchuckin' Pumpkin presentation, I carved a small pumpkin with his mouth open and eyes closed and placed it on the platter. Then I spread the pasta salad around it, including some in the mouth of the pumpkin to make it look like it's puking {ewww!}. A gross out presentation that is great for a Halloween party!

Cook pasta according to box directions. Drain.
I used the multi colored veggie rotini for Halloween colors. 
For this recipe I am using both Old Wisconsin Turkey Sausage 
Bites and Buddig Honey Ham along with the Make It Delish contest secret ingredeint:
 Frigo Cheesesticks.
You can customize this recipe according to what veggies you like.
I used diced cucumber, roasted red peppers, onions, and sliced olives.
Finely slice 1 cup of the turkey sausage bites.
Dice up 12 slices of the honey ham.
Chop up all 10 cheese sticks.
Add pasta and veggies to a large bowl.
Add diced meat and cheesesticks.
Mix everything together.
Now add 1/2 cup Italian dressing and toss to coat.
Taste and add more dressing if needed. If you chill overnight
 you may need to add more dressing before serving. 
Add pasta to a serving platter and top with grated Parmesan cheese.

    As I was reading this, I was wondering what I would make…Maybe a homemade stromboli. I haven't done that in a while, but it's a great family meal or even appetizer for all the football games we'll be watching!

    This reminds me of a dish that my mom would make with Buddig and I haven't had it since I was a child. On white toast place sliced tomato, cover with cheese sauce and sprinkle the top with diced up Beef Buddig. Oh that was so good, I will have to make it soon.

    I would make au gatin potatoes. I slice and prebiol add Budding ham (we like it because it is soaks up all the flavor and top with Wisconsin cheese. My husband can eat this for an entire meal and so can I on cold days!

      This recipe makes about 6 servings so if you double it you should have plenty! Enjoy.

One of my favorite quiet spots in all of Missouri - beautiful Roubidoux Springs in Waynesville, MO. We spent so many afternoons here fishing, splashing, hunting for treasures, skipping rocks, having picnics, and cuddling our dogs. I loved being able to visit again yesterday and enjoy the serene environment and warm sunshine. A must see! ☀️
