The two main ingredients for this recipe are vanilla ice cream and self rising flour. Seriously- that’s all you need!

I chose Homestyle Vanilla ice cream for my bread. You want it softened so it will mix well with the flour.
Also be sure to get the full fat kind. Low fat, fat free, fro-yo, etc will not work for this recipe.

Add ice cream to a large mixing bowl and stir until melted.

Stir in flour.

Mix until just combined.

Spread into a greased loaf pan.

Top with rainbow sprinkles.

Bake at 350 degrees for 40 minutes.

Let cool then slice and serve.

How cool {literally} is this recipe?! I know we will be making it all summer long!

I can’t wait to try other ice cream flavors. Chocolate Ice Cream Bread is next on my list!

One of my favorite quiet spots in all of Missouri - beautiful Roubidoux Springs in Waynesville, MO. We spent so many afternoons here fishing, splashing, hunting for treasures, skipping rocks, having picnics, and cuddling our dogs. I loved being able to visit again yesterday and enjoy the serene environment and warm sunshine. A must see! ☀️
