Today, in honor of Meatless Monday, I wanted to share my Black Bean Burgers with y’all! This is a recipe I have made over and over again for my family. Sometimes I make sliders, other times full size burgers. Sometimes I top with cheese, other times with crunchy veggies. But I always serve my Black Bean Burgers stuffed with cream cheese and topped with Avocado Creme! Once you try this recipe you will get requests from your family for it all the time (trust me!). Even better- it’s meatless and good for ya! Serve with homemade sweet potato fries and corn on the cob for a flavor packed, finger-lickin’ good dinner!

Ingredients:

Makes 4 burgers
  • 15oz can black beans, rinsed and drained
  • 1/2 small yellow onion, diced
  • 2-3 large mushrooms, diced
  •  1 egg, beaten
  • 1/2 cup panko bread crumbs
  • 1 tsp cumin
  • 1/2 tsp chipotle chili powder (adjust according to how spicy you like it)
  • salt/pepper, to taste
  • olive oil, for saute (I like Devo Olive Oil’s Chipotle or Wild Mushroom and Sage flavors)
  • Approx 4 tbsp softened cream cheese spread, chipotle flavor if available
  • hamburger buns, toasted
  • 4 slices of cheese, optional
  • burgers toppings like lettuce, kale, or spinach leaves and sliced tomato
For Avocado Creme:
  •  1 ripe avocado, peeled, pitted, and cut into wedges
  • 1/4 cup sour cream (start with 2 tbsp then add until you get the consistency you like)
  • 1 tbsp lime juice
  • sea salt, to taste

Directions:

  1.  Add a swirl of olive oil to a skillet and add diced mushrooms and onions.
  2. Saute until softened then season with salt and pepper.
  3. Add drained black beans to a medium bowl and press and mash with a fork.
  4. Mix in mushrooms and onions then add egg and bread crumbs.
  5. Finally mix in cumin and chipotle chili powder.
  6. Roll and form into burger patties (sliders or full size).
  7. Form a indent in the center of each burger
  8. Add a spoonful of cream cheese spread to the indent in the burgers and then form the burger over the cream cheese.
  9. Heat a skillet over medium heat, add a swirl of olive oil.
  10. Add 2 burgers at a time and sear on each side until cooked and browned, about 4 minutes each side.
  11. If you want to add sliced cheese on top, add now and cover skillet to steam and melt cheese.
  12. Remove to a plate, then cook remaining patties.
  13. For the avocado creme, combine all ingredients in a food processor
or blender, and mix until smooth. Taste and add more sour cream or lime
    juice if needed.
  14. To plate, add each hot cooked burger to an open toasted bun. Top
with lettuce and tomato (optional) and a hearty scoop of avocado creme
    and then top with bun.

Start by adding a swirl of olive oil to a large skillet over medium heat.
I love flavored olive oils like this one from Devo Olive Oil .

I also love their Chipotle EVOO for an extra kick of flavor!
Season the Black Bean Burgers simply with cumin and Chipotle Chili Powder.

Saute diced mushrooms and onions in the skillet until softened. Add salt and pepper.

Lightly mash drained black beans in a bowl with a fork.

Add onions and mushrooms along with seasonings, egg, and breadcrumbs to the beans. Mix well.

Any cream cheese will work but I love (being a spicy food lover) this chipotle variety.

Roll and form into burger patties (sliders or full size).
Form a indent in the center of each burger
Add a spoonful of cream cheese spread to the indent in the burgers and then form the burger over the cream cheese.

Heat a skillet over medium heat, add a swirl of olive oil.
Add 2 burgers at a time and sear on each side until cooked and browned, about 4 minutes each side.

If you want to go big or go home…add more cheese!
I found (surprise, surprise) this Chipotle White Cheddar sliced cheese that was the bomb!

Add a slice of cheese to the burgers, cover the skillet with a lid, and steam until cheese is melted.

For the avocado creme, combine diced avocado, sour cream, lime juice, and salt in a food processor
or blender, and mix until smooth. Taste and add more sour cream or lime
juice if needed.

Place burger on a toasted bun.

Don’t always use plain ol’ lettuce slices on your burgers. How about
spinach or even this tasty baby kale mix? Crunchy, fresh, and the
perfect burger topper!

One of my favorite veggies is also delicious as a lettuce alternative.
Add a hearty schmear of avocado creme.
Serve with homemade sweet potato fries and corn on the cob!
 Talk about a tasty meal!
Happy Meatless Monday!

We spent Earth Day 2022 in Springfield at the picnic and a movie event in the gardens. It was the perfect sunny afternoon with a breeze and we shared a delicious charcuterie picnic and watched "Bee Movie". The girls did crafts, played in the park, listened to speakers and poetry, and @theparkboard gave us a tree to take home. We had a great time and everyone slept the whole drive home (except Mom)! #earthday2022 #springfieldmo #missourilife #movienight #earthday #picnic #familyfun
