Crock-Pot Blueberry Barbecue Chicken Wings

This recipe came to me last week when I was craving chicken wings {those cravings hit me hard!}. I had been brainstorming out of the box recipe ideas since I had teamed up with Moms Meet {greenmomsmeet.com} to review Wild Blueberries {wildblueberries.com}. Then it hit me – blueberries + chicken wings = Blueberry Barbecue Chicken Wings! The end result, cooked in the Crock-Pot, was outstanding and surprisingly rich and savory!

Why go wild for Wild Blueberries?

• Wild Blueberries have a more intense flavor than regular blueberries. Wild Blueberry plants are more genetically diverse with thousands of interlocking plants spreading and interlocking naturally across fields over thousands of years. That diversity is what gives Wild Blueberries their complex and delicious flavor—an extraordinary mix of tart and sweet.
 • Wild Blueberries have two times the antioxidant capacity of the larger cultivated blueberries. A growing body of research shows the potential health benefits of Wild Blueberries including gut health, diabetes, cancer, and brain health.
 • 99% of the Wild Blueberry crop is frozen fresh at harvest, which locks in their nutrition and taste.
 • Wild Blueberries are called “wild” because they are not planted— they have occurred naturally in barrens and fields in Maine and Eastern Canada for 10,000 years.

Start with 2 1/2 cups of frozen Wild Blueberries, thawed.
These beauties are sweet and tart
and perfect for the base of this flavor- packed barbecue sauce.
Dice 1/2 a sweet yellow onion and press (or finely dice) 4 cloves of garlic.
Add onions, garlic, blueberries, ketchup, honey, apple cider vinegar, mustard powder, and 1 tbsp brown sugar to a large saucepan over medium heat.
Bring to a simmer, stirring often.
Turn heat to med-low and simmer until berries break down and sauce thickens, about 10 minutes.
Taste and add more brown sugar is you would like it sweeter.
Pour sauce into a blender or food processor and pulse until smooth.
You should have about 2 cups of sauce.
Add chicken wings to a large Crock-Pot.
Pour 1 1/2 cups of Blueberry Barbecue sauce on top of chicken.
Toss to coat chicken well.
Cover and cook on HIGH  for 3 hours (or LOW for 5-6).
Preheat oven broiler. Line a baking sheet with aluminum foil.
Remove chicken wings from Crock-Pot and arrange in rows on the baking sheet.
Broil for 2-3 minutes.
Remove from oven, flip, and brush the other side of chicken with the remaining barbecue sauce.
Broil for another 3-4 minutes or until chicken wings are crispy.

Remove from the oven and let cool slightly before serving.
These wings are so tasty and flavorful they don’t even need a dipping sauce!

They sound really nice, I love a good fruity chicken, but not had a BBQ for ages, grilling seems to work fine though so might try these soon 🙂
