Dragon Fire Chicken Wings

Chicken wings have always been a favorite appetizer {or meal for that matter} for my husband and I.
We love them baked or fried, traditional or boneless, and coated in just about any sauce.
But wings are a messy indulgence that we usually order when we go out to a sports bar and not something we make at home. However, since we are trying to eat in more, I decided to make my husband’s favorite sweet and spicy wings at home. My version is baked until crisp and then tossed in a fiery sweet and spicy sauce.
These chicken wings are inspired by the new Disney movie, Pete’s Dragon, that comes out today. I remember watching the original movie over and over as a child and I am excited to see the new version with my kids this week. These Dragon Fire Chicken Wings are spicy hot and bright red, just like dragon fire and taste pretty darn finger lickin’ good too!

Dragon Fire Chicken Wings

Dragon Fire Chicken Wings

Ingredients

  • 3 lbs chicken wings thawed
  • Tabasco Spicy Salt {or similar spicy seasoning}
  • 1/2 cup apricot or peach preserves
  • 1/4 cup Sriracha hot sauce

Instructions

  • Preheat the oven to 350 degrees.
  • Grease two large baking sheets.
  • Rinse and then dry the chicken wings thoroughly with paper towels.
  • Place the chicken wings in a large bowl and season with seasoning. I used Tabasco Spicy Salt. Toss to coat.
  • Spread the wings in a single layer on the two baking sheets.
  • Bake the wings until browned and crispy, about 45 minutes.
  • When the wings are almost done baking, make the sauce by mixing together apricot preserves and Sriracha in a small saucepan.
  • Heat over med low and stir until smooth. Remove from heat.
  • When the wings are done in the oven, carefully remove the wings from the baking sheet and transfer to a large, heatproof bowl.
  • Pour the warm sauce over the wings and gently toss to coat.
  • Serve warm with lots of napkins!

I used a 5lb bag of frozen chicken wings. 
For this recipe I used a little over half this bag.
Thaw the chicken wings and rinse under running water then pay dry.
Grease two large baking sheets and preheat your oven to 350 degrees.
I use Tabasco Spicy Salt for this recipe but you could use any seasoning blend you like. 
Sprinkle the dried wings with 2 tbsp seasoning.
Toss to coat.
Spread out on the baking sheets and place in the oven. 
Bake the wings until browned and crispy, about 45 minutes.
For the sauce I use just two ingredients: apricot preserves and Sriracha hot sauce.
Add both ingredients to a saucepan.
Heat over med low and stir until smooth. Remove from heat.
When the wings are done in the oven, carefully remove the wings 
from the baking sheet and transfer to a large, heatproof bowl.
Pour the warm sauce over the wings. 
Gently toss to coat.
Serve piled high on a platter for serving at a party or potluck.
Make sure you have lots of napkins. These wings are messy but good!
Ashton loved them but we made sure to both have a big ol’ glass of milk to cool our mouths down.

One of my favorite quiet spots in all of Missouri - beautiful Roubidoux Springs in Waynesville, MO. We spent so many afternoons here fishing, splashing, hunting for treasures, skipping rocks, having picnics, and cuddling our dogs.
