It’s minion weekend again and we are so excited! The new Despicable Me 3 movie comes out and we have tickets to see it opening day! To celebrate my girls and I made Minion Banana Ice Cream to enjoy before the show! It only has 3 basic ingredients- frozen bananas, milk, and vanilla, and is low sugar and low fat! We added yellow color, candy eyeballs, and sprinkles to make it look like our favorite minions!

This No Churn Healthy Minion Banana Ice Cream is the perfect healthy and cool summertime treat for Minion Lovers.

Mom and Dad enjoying our coffee and
decked out in our Minion gear before we head out to the movies!
The girls were just a little bit excited for Despicable Me 3!

I just love our Cinemark Bistro Theater! Leather recliners and amazing food {Ava devours the Pulled Pork Nachos every time} are just some of the perks of seeing movies here!

Movie day! Of course we not only all wore minion outfits
but the girls also brought their minion pillow and doll!

Little Miss helped mix in the sprinkles…and eat some too!
Add sprinkles. I used a mix of blue and white.
Stir in gently.
Stella’s favorite part was the fun candy eyeballs!
Not stir in half of the candy eyeballs.
Pour contents into a loaf pan, smoothing down the top.
Sprinkle on the remaining candy eye balls on top.
Place back in the freezer.
Freeze for at least one hour or until solid.
Scoop into cones and serve!
We found these fun Minion sugar ice cream cones at Walmart!
Look at my little foodie! She sure does love her ice cream!
These two babies sure do have my heart! Love my girls.
The face she makes when you ask for a bite of her ice cream….

Hope you enjoy this Minion Banana Ice Cream as much as we did!

I saw a post about McDonald's having yellow banana ice cream to celebrate minions BUT it was only available in Singapore! 🙁 This is a great make-at-home option. So fun! 🙂

🍜 We had so much fun celebrating Lunar New Year last weekend with dinner at @pho_85_noodle_house_llc in Bentonville, AR! The Banh Mi sandwich and Beef and Seafood Pho soups were filled with fresh ingredients and flavor packed. As you can see their portions were huge so it's a great place to share! We also tried an appetizer sampler, Thai Tea, Coconut Boba Smoothie (my girls' favorite) and macarons for dessert. Everything was made to order and delicious. The staff was kind and helpful. 🌟I had to step out of my comfort zone today and attend my first networking event since moving to Arkansas. I already struggle with meeting new people and being social since I work from home but now I live in a new city and know no one. Thank goodness I found @winnwa . The networking lunch today at @bonefishgrill was exciting, encouraging, and of course, fun! Over 80 local business women attended and everyone had a chance to introduce themselves and share what they do. I look forward to more #womeninnetworking events in the future. Hoping to make some new friends too!
