“Nobody Puts Baby in the Corner” Dirty Dancing Lemon Bars for Movie Monday

It’s that time again- Movie Monday!
This month’s theme was Romance so naturally I chose a classic: Dirty Dancing.

This hit came out in 1987 and stared dreamy Patrick Swayze as a resort dance instructor and Jennifer Grey as “Baby”, his lucky new dance partner for the summer. It featured a final memorable dance to “(I’ve Had) The Time of My Life” and pretty much made every girl that year fall head over heels for Mr. Patrick Swayze!

These gooey lemon bars, layered with fresh lemon and a buttery shortbread crust, are a delicious treat year round! Perfect for sharing with your loved ones on movie night! Inspired by “Dirty Dancing” for Movie Monday, you are going to love these ‘Nobody Puts Baby in the Corner’ Lemon Bars!


On the last (or fourth) Monday of each month, a group of bloggers participate in a #MovieMondayChallenge, hosted by C’mon Get Crafty! We decide on a topic, genre, or specific movie to use for inspiration and everyone gets free reign to create something wonderful!

This month’s challenge was. . . . Romance!
Everyone was allowed to choose their own favorite romantic film for this challenge.

Lemon Bars

Makes 15-20 bars

Ingredients

For the crust:

  • 2 cups flour
  • 1 cup powdered sugar
  • 1 cup cold {2 sticks} butter cubed
  • 1/8 teaspoon salt

For the filling:

  • 4 eggs room temp
  • 1/4 cup flour
  • 2 cups sugar
  • 4 lemons juiced and zested {about 8 tbsp of juice}
  • powdered sugar for dusting
  • Optional: small plastic baby decorations

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a 9-x13 inch baking dish with butter.
  • Sift together the flour, powdered sugar, and salt.
  • Add the butter to the bowl and use your hands {or a pastry cutter} to cut it all together until the mixture resembles fine crumbs. You can also use a food processor.
  • Press into the prepared pan and bake until golden around the edges, about 20 minutes. Let cool slightly.
  • For the filling: in a medium bowl stir together the sugar and flour.
  • Add the eggs and whisk until smooth.
  • Add the lemon zest and juice and mix until combined.
  • Pour over the crust and bake 25 minutes.
  • Let cool completely.
  • Sift powdered sugar over the top.
  • Cut into squares.
  • Carefully remove to a serving platter.
  • Add a plastic baby to each corner of the lemon bars.

Press into the prepared pan.
 Bake at 350 degrees until golden around the edges, about 20 minutes.

Let cool slightly.

Add the lemon zest

..and the juice from the 4 lemons. Mix well.

Pour over the crust.

Bake 25 minutes at 350 degrees.

 Let cool completely.

 Sift powdered sugar over the top.

 You can never have too much sugar, right?! Haha.

 Cut into squares.

Carefully remove to a serving platter or plate.

Add a plastic baby to each corner of the lemon bars. 

 These are fun to serve on movie night at home but also for 80’s themed parties!

    Best movie line ever! I can't even count how many times we've watched Dirty Dancing. LOVE the baby in the corner of the Lemon Bars. Now I want some lemon bars. Yours look so inviting.
