Chocolate Chip Cookie S'mores

Y'all, it's true, I never met a s'mores I didn't like!
Now that fall is finally here I am ready to go camping and enjoy our favorite treat! 
We recently took fall camping themed family photos with Jeni Marie Studios and I decided to make a tasty treat to eat during our photos! I combined two kid friendly fall treats- chocolate chip cookies and gooey s'mores- to make these ah-mazing Chocolate Chip Cookie S'mores .

Crock-Pot Honey Garlic Pork Freezer Meal

Freezer meals are my go to lately. My father had surgery last month and I stocked up my parent's freezer with these easy to make meals. Now with it being moving week here we are eating up our supply and it saves me so much time and cleaning! This Honey Garlic Pork freezer meal is all prepped and ready to  go with boneless pork and chopped sweet potatoes and apples mixed with honey and garlic sealed in a freezer bag. Just defrost overnight then pour into your Crock-Pot in the morning. Cook it on low and it is ready is 6-8 hours. Easy-peasy and just what this busy Mama and her family wants for dinner!

Dinosaur Rawr Pasta Salad #MovieMonday

This dino shaped pasta salad has all my kiddos fave ingredients including chicken,  bacon, cheese, and peas. Mix it all up and toss qith creamy ranch dressing for an easy meal. Inspired by our favorite monster movie, Jurrasic Park! 

On the last (or fourth) Monday of each month, a group of bloggers participate in a #MovieMondayChallenge, hosted by C'mon Get Crafty! We decide on a topic, genre, or specific movie to use for inspiration and everyone gets free reign to create something wonderful!

This month's challenge was. . . . MONSTER MOVIES! Everyone was allowed to choose their own favorite film so long as it was inspired by the Monster challenge. I chose my kid's favorite monster: dinosaurs! So I immediately thought about the scariest movie I saw as a child and that was 
Jurassic Park!

Ingredients: 


  • 1 10z box dinosaur shaped pasta, cooked and cooled
  • 2 thin chicken breasts, cooked and diced
  • 5 slices bacon, cooked and chopped
  • 1 cup frozen peas
  • 1 cup cubed cheese
  • 1/2 cup shredded parmesan cheese 
  • 1/4 cup or to taste ranch dressing (add more before serving if chilling)

Directions: 

  1. Add all ingredients to a large bowl.
  2. Toss to combine.
  3. Serve right away or cover and chill.
  4. Add more dressing if needed.
I found this fun dino pasta at our local Central Market and knew my kiddos would love it! 
Cook pasta according to package and drain.
How cute is this pasta?!
I cooked 2 thin boneless chicken breasts and 5 slices of bacon then chopped it up.
Add all ingredients to a large bowl.
Now add ranch dressing. I used honey bbq flavor.
Start with 1/4 cup ranch and add more to taste or if the pasta soaks it up.
Toss to combine.
Serve right away or cover and chill.

Lunch Lady Meatloaf Muffins and First Day of School Memories

In honor of the first day of school I am sharing this kid approved recipe for Lunch Lady Meatloaf Muffins. These "muffins" are filled with cheese and BBQ sauce and topped with mashed potatoes. I bet the Lunch Lady would love them too!
It seems like just days ago my baby started preschool here in Texas. Now she is an official kindergartner. Time seriously flies y'all and I am trying not to cry all day long!

We had a wonderful Mommy/ Daughter Day before Ava started school.
Lunch, manicures, shopping, and lots of fun with my girl!
Packing her backpack and getting ready for her first day.
Oh my heart! She looks so grown in her uniform! I love it.

Ingredients:

Makes 12 muffins 

  • 1 1/2 lbs ground beef or pork
  • 2 eggs, beaten
  • 1/2 yellow onion, grated
  • 1/2 cup panko bread crumbs
  • 2 cloves garlic, minced
  • 1/2 cup bbq sauce, divided
  • 1/2 cup plus 2 tbsp shredded cheddar cheese, divided
  • salt/white pepper, to taste
  • 2 cups mashed potatoes
  • bacon, diced for topping
  • green onions, diced for topping

Directions:

  1. Preheat oven to 350 degrees. 
  2. Spray a muffin tin with nonstick spray. 
  3. In a large bowl combine beef, eggs, bread crumbs, 1/4 cup bbq sauce, 1/2 cup cheese, onion, and salt and pepper. 
  4. Using hands, combine well. 
  5. Fill each well of muffin tin to top with the meat mixture, pressing down.
  6. Bake for 25-30 minutes until browned and cooked through.
  7. Top with remaining bbq sauce and shredded cheese on each muffin.
  8. Bake for an additional two minutes.
  9. Remove from the oven and let sit for a few minutes before removing from pan.
  10. Top with piped or a scoop of mashed potatoes on each. 
  11.  Garnish with bacon and green onion "sprinkles". 
I used good quality ground beef, around 90% fat, for this meatloaf recipe. 
You can also use ground pork.
My hands down best ingredient for all meatloaf and meatballs: grated onion.
I grate between 1/2 to 1 whole yellow onion and add the pulp and juice to my meat mixture. It makes for a very flavorful and moist meatloaf. 
In a large bowl combine beef, eggs, bread crumbs, 1/4 cup bbq sauce, 1/2 cup cheese, onion, salt and pepper. 
Using hands, combine well.
