Barbecue Armadillo Eggs for Game Day Homegating

I don’t know about y’all but in our household Game Day is a BIG DEAL. Which goes to say that the Big Game is a major event and we prepare for it days in advance! This year we are hosting friends and family to watch the game and enjoy some serious Homegating!
My go to products for Homegating appetizers are Tyson Foods products like Wright® Brand Bacon, Ball Park® Hot Dogs, and the kid’s favorite, Tyson® Any’tizers® Snacks. It doesn’t get more convenient or delicious than bacon, hot dogs, and chicken while watching the Big Game! 
Luckily my local Kroger was stocked up on all the foods I needed for my Game Day Homegating event! They even had huge packs of Wright Brand Bacon, in the refrigerated section.
After a few experiments in the kitchen, I decided to make Barbecue Armadillo Eggs, a hearty Southern appetizer, as my star dish for my Homegating party! Armadillo Eggs may sound funny but trust me y’all they are ah-mazing! You start with jumbo jalapeño peppers, halved and filled with a mixture of cheese and bacon then cover them in sausage and finally wrap in thick Wright Brand Bacon! Bake until perfectly crisp and juicy and you have a winning dish for your Game Day celebration!

Barbecue Armadillo Eggs

Makes 20 appetizers

Ingredients

  • 10 large jalapeños halved and seeded
  • 1 8 oz package cream cheese softened
  • 1/2 cup cheddar cheese shredded
  • 1 pound ground country breakfast sausage
  • 24 oz {1 1/2lb} package of Wright Brand Hickory Smoked Bacon divided
  • 1/2 cup sweet barbecue sauce for basting

Instructions

  • Preheat oven to 400°.
  • Line a baking sheet with aluminum foil, and top with a metal cooling rack.
  • Cook 2 slices of Wright brand bacon until crisp.
  • Drain and finely chop.
  • In a bowl mix together the chopped bacon, cream cheese, and cheddar cheese.
  • Fill each jalapeño half with cream cheese mixture.
  • Mold a piece of sausage around each jalapeño half, making sure to cover the whole pepper.
  • Using remaining bacon, wrap one piece of bacon around the sausage covered jalapeños.
  • Add the bacon wrapped jalapeños to the rack on the baking sheet.
  • Bake until bacon is crispy, and sausage is thoroughly cooked, about 30-35 minutes, flipping halfway.
  • Remove from heat and brush with barbecue sauce.
  • Serve warm with additional barbecue sauce on the side for dipping.

I love using smoky Wright Brand Bacon for my Game Day recipes!
This recipe uses it two ways- in the filling and wrapped around the spicy jalapeño peppers.

Start with 10 large jalapeños.
I recommend you wear gloves because the juices will linger on your skin for days!
Halve and seed all the jalapenos.

In a bowl mix together the 2 slices of cooked chopped bacon, softened cream cheese,
and shredded cheddar cheese.

Fill each jalapeño half with cream cheese mixture.

Mold a piece of sausage around each jalapeño half.

Make sure to thinly cover each jalapeño half.

 Wrap one piece of bacon around the sausage covered jalapeño.

Add the bacon wrapped jalapeños to the rack on the baking sheet.

Bake at 400 degrees until bacon is crispy, and sausage is thoroughly cooked, about 30-35 minutes, flipping halfway.

These little babies pack a punch so I like to add a sweet barbecue sauce on top and as a dipping sauce on top. This does make them somewhat messier but it is so worth it!

Remove from heat and brush with barbecue sauce.

I like to use sweet barbecue sauce to contract the spicy peppers and savory bacon.
However, these Armadillo Eggs are delicious one their own too without sauce or dip. 

Talk about a flavor explosion!
