As a busy mom, I love to feed my family healthy, filling meals but I don’t always have time for an hour of prep. So needless to say, I am a big fan of slow cooker and casserole meals (and I LOVE leftovers)! I created this casserole using a family favorite shortcut- Manwich Sloppy Joe Mix. What is easier than mixing a few ingredients together and popping it in the oven, right? Manwich is packed full of flavor so I can skip the seasonings and extra veggies, and simply use this all-in-one sauce! Better yet, this tasty, family friendly dinner in under 45 minutes! Check out the easy recipe for Manwich Turkey Sloppy Joe and Cheesy Cornbread Casserole below then scroll down to enter my giveaway to help you make this meal at home!Find tasty recipes perfect for any weeknight on the Manwich recipe page: Easy Weeknight Meals

Manwich Turkey Sloppy Joe and Cheesy Cornbread Casserole

Ingredients

  • 15 oz can Manwich Sloppy Joe Sauce I used Thick and Chunky
  • 1 lb ground turkey
  • 8.5 oz box corn muffin mix
  • 1 egg beaten
  • 1/3 cup milk
  • 1 1/4 cup cheddar cheese shredded
  • 15 oz can creamed corn

Instructions

  • Preheat oven to 400 degrees.
  • Crumble turkey in a large skillet and stir cooking over medium heat until browned.
  • While the turkey is cooking mix the corn muffin mix, 1 egg, can of creamed corn, 1/2 cup of shredded cheese, and milk in a large bowl. Stir until combined then let sit.
  • Drain grease from turkey, turn heat down to med low then add Manwich Sloppy Joe Sauce. Let is warm and come to a simmer.
  • Spray a 8X8 baking dish with cooking spray then pour sloppy joe mixture into dish. Top with the cornbread mixture.
  • Add 1/2 cup shredded cheese (you can never be too cheesy, right?) on top and pop in the center of the oven.
  • Bake for 25 minutes or until the cornbread is cooked through and golden.
  • I take my dish out of the oven, add a sprinkle of more cheese, and bake for another 2 minutes until melted.
  • Let cool slightly then cut into squares and serve.

Two of the main healthy ingredients: lean ground turkey and Manwich Thick and Chunky Sloppy Joe Sauce!
Did you know? Each can of Manwich is free of artificial flavors and preservatives.
Try all three sweet and tangy Manwich varieties!
Step one: brown the crumbled ground turkey then drain.
Meanwhile mix corn muffin mix with one egg, 1/3 cup milk, 1/2 cup of shredded cheese, and one can of creamed corn. Let sit.
Turn down the heat and add one can of Manwich Sloppy Joe Sauce. Stir and bring to a simmer.
Spray a baking dish with non stick spray and pour in sloppy joe mixture.
Top with cornbread mix.
Add another 1/2 cup of cheese for good measure! Bake at 400 degrees for 25-30 minutes, until cornbread is cooked through.
I like to take mine out, sprinkle on another 1/4 cup of cheese or so, and pop it back in the oven until the cheese melts, about 2-3 minutes.
Then let cool slightly, slice into squares and serve!
A delicious hearty meal for the whole family in under 45 minutes!

I would definitely try this recipe except I would use the bold and spicy MAnwich along with a few jalapenos added to the meat mixture and to the cornbread.

I'm amazed at the exposure you get on your blog. My recipes are all home cooked and I seldom use anything but fresh ingredients and no canned soups. This looks very good and I've made it as well many times using my own Wimpie/Sloppy Joe recipe. Any suggestions how to increase my blog exposure? You seem to be doing something right. :).

This takes a lot longer than 25 minutes in the oven if you are using an 8×8 inch dish. Just a heads up!!

It only took me 25-30 minutes at 400 degrees to bake through. Then I did a few extra minutes to melt the added cheese. Let me know how yours comes out.

No it doesn’t, the sloppy joe mixture is already cooked when you put it in the dish so you’re only waiting for the cornbread mixture to bake and that can absolutely be done in 25 minutes. Unless of course you want it to be hard as a rock!
