Mile High Fresh Strawberry Pie

Our local Sam’s Club had a special on 2lbs of huge fresh strawberries for $3. 
So of course, I bought a few containers and then came home and tried to think of some fun Strawberry recipes.
We made PB&J Smoothies and Strawberry Sauce for Ava’s French Toast sticks. 
We had my favorite snack: sweet strawberries dipped in whipped cream. We even made a delish Strawberry Cobbler. 
Then I thought, why don’t I make a pie?
So this Mile High Fresh Strawberry Pie was assembled in a matter of minutes and after putting it in the fridge and letting it set for a couple hours {I know the wait killed me!} we topped it with whipped cream and dug in! It was sweet and absolutely delicious and totally worth the wait!

Mile High Fresh Strawberry Pie

Ingredients

  • 1 refrigerated pie crust dough
  • 2 cups water
  • 2 cups sugar
  • 6 tbsp cornstarch
  • 1 large .06 oz. package strawberry jell-o
  • 2 lbs strawberries about 6 1/2 cups, de-stemmed and sliced
  • whipped cream for topping

Instructions

  • Roll pie crust out and press into a 9 or 10 inch pie plate. Trim and crimp sides.
  • Bake pie shell according to package directions. Cool.
  • Bring water, sugar, and cornstarch to a boil in a large pot over medium heat.
  • Stir until thick and clear, about 2-3 minutes.
  • Add strawberry jell-o powder and mix well.
  • Remove from heat and fold in sliced strawberries.
  • Pour into cooled pie shell.
  • Place in refrigerator until set, about 1-2 hours.
  • Slice and serve topped with a dollop of whipped cream.

 Roll pie crust out and press into a 9 or 10 inch pie plate. Trim and crimp sides.
Bake pie shell according to package directions. Cool.
Bring water, sugar, and cornstarch to a boil in a large pot over medium heat.
Stir until thick and clear, about 2-3 minutes.
I used a large box of sugar free Strawberry Jell-o.
 
Add strawberry jell-o powder and mix well.
Remove from heat and fold in sliced strawberries.
It was tempting to not sample this mixture with a spoon! 
Pour into cooled pie shell.
It will be filled to the top and packed full of berries!
Place in refrigerator until set, about 1-2 hours.
 This is quite possibly the most beautiful dessert I have ever made!
 Slice and serve topped with a dollop of whipped cream.
I made this pie on our anniversary night and we enjoyed it all week long {it’s one big ol’ pie}!
My husband and I celebrated 3 years with sparkling grape juice and my crazy good Skillet Steak with Blue Cheese Butter and Garlic Roasted Mushrooms.
