<div class="separator" style="clear: both; text-align: center;">&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8970-682x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8970-682x1024.jpg" width="213" height="320" border="0" data-original-height="1600" data-original-width="1067"></a></div>
<div class="separator" style="clear: both; text-align: center;">I am loving this Lobster Oil from the French Farm.</div>
<div class="separator" style="clear: both; text-align: center;">At first I thought it would be too strong or fishy but it actually has a very rich flavor that is perfect for dressings, sauces, and soups.&nbsp;</div>
<div class="separator" style="clear: both; text-align: center;"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8968-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></div>
<div class="separator" style="clear: both; text-align: center;">You can steam your own or have your lobsters steamed at the store.</div>
<div class="separator" style="clear: both; text-align: center;">Then it&#8217;s time to crack them open and remove all the meat from the tail and claws.</div>
<div class="separator" style="clear: both; text-align: center;">Discard the shells.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8969-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8969-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">Chop up the lobster into large chunks.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8973-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8973-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">Now peel and dice the avocados.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8975-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8975-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">How delicious does this look already?!</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8976-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8976-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">Add the lobster and avocados to a medium bowl.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8977-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8977-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">Squeeze lemon juice on top and toss to coat.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8978-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8978-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">Add salt and black pepper to taste.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8979-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8979-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">Then diced chives.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8981-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2017/06/IMG_8981-1024x682.jpg" width="320" height="213" border="0" data-original-height="1067" data-original-width="1600"></a></div>
<div style="text-align: center;">And finally Lobster Oil.</div>

<div style="text-align: center;">Gently mix.</div>
<div class="separator" style="clear: both; text-align: center;">&nbsp;</div>

<div class="separator" style="clear: both; text-align: center;">My parents joke that as soon as I could eat solid food I had gourmet tastes.</div>
<div class="separator" style="clear: both; text-align: center;">&nbsp;I was gobblin&#8217; up lobster and sushi at age two and it was obvious I was a foodie in the making.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/188587_5362870979_2060_n.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/188587_5362870979_2060_n.jpg" width="404" height="303" border="0"></a></div>
<div class="separator" style="clear: both; text-align: center;">So naturally any dish with lobster is a favorite of mine and every year for my birthday</div>
<div class="separator" style="clear: both; text-align: center;">&nbsp;I celebrate with a steamed lobster {or 2}!</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_9048-682x1024.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_9048-682x1024.jpg" width="316" height="475" border="0"></a></div>
<div style="text-align: center;"><b>Lobster Mac and Cheese</b> is the ultimate decadent comfort food and ever since trying it at Pot Roast and Pinot</div>
<div style="text-align: center;">{check out my review <a href="https://www.4theloveoffoodblog.com/2014/05/pot-roast-and-pinot-pensacola-fl.html">here</a>}, I have been wanting to create my own version at home.&nbsp;</div>
<div style="text-align: center;">For my<b> Lobster Mac</b> I use twisty cavatappi pasta along with a creamy base of cheddar and fontina cheese and a heaping 1 lb of chopped lobster meat.</div>
<div style="text-align: center;">I top it was a crispy panko and Parmesan crust and the result? Well, it&#8217;s foodie heaven on a plate y&#8217;all!&nbsp;</div>

<div style="text-align: center;">
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4789-682x1024.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4789-682x1024.jpg" width="213" height="320" border="0"></a></div>
<p>I have had mac and cheese with many different kinds of pastas but my favorite is twisty cavatappi pasta.</p>
<p>They are the perfect size and to me they add a gourmet spin on the traditional elbow macaroni.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4791-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4791-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Add pasta to a large pot of boiling water and cook to almost al dente, about 4-5 minutes.<br />
Drain and set aside.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4798-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4798-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Add 4 tbsp butter to a saucepan over medium heat.<br />
Melt then add onion and garlic and cook until softened.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4799-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4799-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Add flour, stirring to combine.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4800-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4800-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Let cook and darken for a minute.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4802-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4802-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Then whisk in milk slowly until smooth.<br />
Bring to a boil then reduce heat and simmer until thick.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4795-1024x554.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4795-1024x554.jpg" width="320" height="173" border="0"></a></div>
<div class="separator" style="clear: both;">I use three different cheeses for this recipe: &nbsp;Cheddar, Fontina, and Parmesan.</div>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4804-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4804-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Add 2 cups each of shredded cheddar and shredded fontina cheese.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4805-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4805-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Whisk in, in batches if needed.</p>
<div class="separator" style="clear: both; text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4806-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4806-1024x682.jpg" width="320" height="213" border="0"></a></div>
<p>Keep whisking until smooth and remove from heat.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4794-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4794-1024x682.jpg" width="320" height="213" border="0"></a><br />
Steam lobster {I like whole Maine lobster} and set aside until cool enough to handle.<br />
Depending on how much lobster you want in your mac and cheese add meat from 2-4 1 lb lobsters.<br />
* You can also save time by having them steamed at the market when you buy them.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_9952-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_9952-1024x682.jpg" width="320" height="213" border="0"></a><br />
Peel lobster and place the meat from the claws and tails in a bowl.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4808-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4808-1024x682.jpg" width="320" height="213" border="0"></a><br />
Optional: reserve the meat from two lobster claws for garnish.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4793-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4793-1024x682.jpg" width="320" height="213" border="0"></a><br />
Sometimes I cook large shrimp, peel, chop, and add to the cheese sauce too.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4813-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4813-1024x682.jpg" width="320" height="213" border="0"></a><br />
Season with salt, pepper, and nutmeg.<br />
<a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4811-1024x682.jpg"><img decoding="async" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2016/02/IMG_4811-1024x682.jpg" width="320" height="213" border="0"></a><br />
Now stir in cooked pasta then spread into a 9X13 greased baking dish.<br />

<div style="text-align: center;">&nbsp;Add yolks, heavy cream, lemon zest, thyme, and chives to a food processor.</div>

<div class="separator" style="clear: both; text-align: center;">It&#8217;s that time of year again: <b>Charlie the beagle dog&#8217;s birthday</b>! My feisty pup turned 9 this year and as is our tradition I make him his favorite food to celebrate:<b> Lobster</b>! Yes, you read that right I feed my dog lobster. He loves it more than anything and dances around like a puppy when he sees and smells it. Sometimes he just gets a plate of steamed <b>Maine Lobster</b>, other years I make him a special dish.</div>
<div class="separator" style="clear: both; text-align: center;">Here are two of <b>Charlie&#8217;s birthday Lobster meals</b> from years past:</div>
<p style="text-align: center;"><b><a href="https://www.4theloveoffoodblog.com/2013/01/birthday-lobster-and-potato-hash-with.html">Lucky Dog Lobster and Potato Hash with Hollandaise</a></b></p>
<p style="text-align: center;"><b><a href="https://www.4theloveoffoodblog.com/2011/01/happy-birthday-charlie-beagle.html">Lobster Roll&nbsp;</a> </b></p>
<p style="text-align: center;"><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/02/IMG_0582-1024x980.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/02/IMG_0582-1024x980.jpg" width="401" height="383" border="0"></a></p>
<div style="text-align: center;">This year I decided to make my favorite<b> Lobster Thermidor</b>. Charlie isn&#8217;t a fan of mushrooms so he had a heaping plate of fresh lobster for his dinner. We also treated the pups to birthday dog cookies from my favorite dog bakery back home <b>3 Dogs and a Chick</b>. You can order from their Etsy page <a href="http://www.3dogsandachick.etsy.com/">here</a>.</div>
<div style="text-align: center;"><b>&nbsp;</b><a style="margin-left: 1em; margin-right: 1em;" href="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/02/IMG_0578-682x1024.jpg"><img decoding="async" class="" src="https://www.4theloveoffoodblog.com/wp-content/uploads/2014/02/IMG_0578-682x1024.jpg" width="301" height="452" border="0"></a></div>

This year he turned 8 and call me crazy but I swear my dog&#8217;s favorite food is lobster- he goes nuts for it! So every year I make him his own steamed lobster and we have a Lobster Feast too! I&#8217;ve made Lobster Rolls, Lobster &amp; Egg Salad Sandwiches, &amp; Lobster Thermidor&#8230;and this year I decided to make Lobster Hash!<br />
&nbsp;<br />
&nbsp; This homey meal is great for a hearty brunch or a delicious dinner.&nbsp;</div>

<p>I love using my Cast Iron skillet, especially for a hearty dish like <b>Lobster Hash</b>! It has a built in flavorful seasoning, holds it&#8217;s heat and cooks everything evenly!<br />

<div class="separator" style="clear: both; text-align: center;">You can use either steamed Lobster tails or whole Lobsters (claw and tail meat).&nbsp;</div>

<p>Once cooked, mix everything together in the cast iron and warm. Them add the Hollandaise and poached egg and green onions. Time to dig in!</p>

<p><i><b>Don&#8217;t break the egg right into the simmering water to poach. Break it into a bowl first them slide into the water. This way you do not accidentally drop egg shells into the poaching liquid. </b></i></p>

<p>Perfectly poached eggs, the yolk is still runny so you can break it over the<br />

<p>You don&#8217;t need to buy a package of Hollandaise sauce! Hollandaise sauce is actually easy to make!<br />
It&#8217;s basically just butter, egg yolk, and lemon juice beaten together.</p>
